- Sauté . Start by heating your oil in a large saucepan over medium heat for one minute. Then add the diced onion and cook until translucent (about two and a half minutes). Lastly, add in the garlic and sauté for another minutes.
- Season. Stir in the curry powder and garam masala and sauté for another minute to incorporate the seasonings with your other ingredients.
- Gravy. To make the tomato based 'gravy', stir in the sugar along with the tomato sauce and and diced tomatoes. Stir until you get a gravy (about a minute or two).
- Simmer. Next, stir in the coconut milk and then bring the sauce to low simmer at low to low medium heat.
- Chickpeas. Add the rinsed and drained chickpeas to the skillet and cook until they are warm and slightly soft (five to ten minutes).
- Serve. Remove the skillet from the heat and stir in your spinach. Then serve your curry as desied.
Expert Tip 👉 Avoid overcooking your spinach as they will get mushy. You can prevent this by removing the saucepan from the heat and waiting a minute or two before adding the spinach.
How to store Chickpea Curry
Once your curry has cooled, it can be stored in an airtight container. When properly stored, this chickpea curry should keep for up to four days when refrigerated or up to a few months when frozen.

- 31 oz Chickpeas --Use (2 cans) cooked beans that have been rinsed and drained.
