Equipment

Ingredients

  • 2 cups Corn Kernels.
  • ¼ cup Red Onion - chopped
  • 1 Red Bell Pepper. - Stem and seeds removed and diced.
  • 1 Jalapeño Pepper. - Stem and seeds removed and then finely diced.
  • ¼ cup Cilantro. - Use fresh cilantro that has been chopped.
  • 1 tbsp Lime Juice.
  • 1 tbsp Olive Oil
  • 1 Chipotle Pepper in Adobo Sauce. -This should be finely chopped.

Seasonings- ground cumin, smokey paprika, salt, and pepper to taste.

Instructions

  • Prepare the ingredients as indicated. This includes dicing and chopping.
  • In a large bowl, combine together the corn, chopped onion, chopped bell pepper, jalapeño, and cilantro. You can use a rubber spatula or spoon to stir or fold the ingredients together.
  • Next, in a smaller bowl, use a whisk to combine together the lime juice, olive oil, and chipotle pepper . You can add your seasonings here or wait until the ingredients have been combined. Then pour this mixture over the ingredients in the large bowl and toss the ingredients until the ingredients are well integrated.
  • Add your seasonings to the bowl, toss, and make adjustments as needed.
  • Cover the bowl and refrigerate your salsa for at least a half hour.
  • You can serve this salsa cold as a dip or a condiment to other recipes such as grilled chicken or on top of a salad.
