    • Red Onion. Your onion should be finely chopped.
    • Red Bell Pepper. Stem and seeds removed and diced.
    • Jalapeño Pepper. Stem and seeds removed and then finely diced.
    • Cilantro. Use fresh cilantro that has been chopped.
    • Lime Juice. Freshly squeezed is preferred.
    • Olive Oil Another flavorful oil such as avocado oil can be used instead.
    • Chipotle Pepper in Adobo Sauce. This should be finely chopped.
    • Seasonings- ground cumin, smokey paprika, salt, and pepper to taste.

    Using fresh corn is always preferred however, frozen corn that has been thawed or canned corn that has been drained can also be used. While sweet yellow corn and white corn are both sweet, some folks believe that the white corn is sweeter.

    Yield: Approximately 2 cups

    1. Prepare the ingredients as indicated. This includes dicing and chopping.
    2. In a large bowl, combine together the corn, chopped onion, chopped bell pepper, jalapeño, and cilantro. You can use a rubber spatula or spoon to stir or fold the ingredients together.
    3. Next, in a smaller bowl, use a whisk to combine together the lime juice, olive oil, and chipotle pepper. You can add seasonings here or after the ingredients have been mixed together. Then pour this mixture over the ingredients in the large bowl and toss the ingredients until the ingredients are well integrated.
    4. Add your seasonings (or adjustments) to the bowl, toss, and make adjustments as needed.
    5. Cover the bowl and refrigerate your salsa for at least a half hour.
    6. You can serve this salsa cold as a dip or a condiment to other recipes such as grilled chicken or on top of a salad.
