- Next, in a large skillet on medium heat, heat the olive oil for one minute. Add the diced onion to the skillet and cook it until translucent and softened (about three to five minutes). Then add the pepper and garlic and cook until tender (about two and a half more minutes).
- Stir in the cooked quinoa, beans, and corn and then stir in the taco seasoning until the ingredients are combined.
- Cook the ingredients for three to five minutes or until heated through, stirring occasionally until the ingredients
- To assemble the tacos, simply lay out your tortillas, add a tablespoon or two of the vegan meat (depending on the size of your tortillas), and then top with the tomatoes and sliced avocado
Expert Tip 👉 If your ingredients get dry when they are cooking, you can stir in a tablespoon or two of salsa or water.
