Tips for making vegan berry crumble bars.
All purpose flour was used to make the base in my bars with. You can use an alternative flour as long as it measures and bakes like all purpose flour.
Here are some more great tips for you.
- My bars were made with blueberries. You can however use another berry to make your bars with. I like chopped strawberries for a recipe such as this one example.
- Brown sugar was also used to make my bars. Feel free to use an alternative as long as it can be baked with too.
- While not essential to the success of this recipe, you can refrigerate the the crumble topping mixture before assembling the crumble for baking. Refrigerating the mixture for 15 minutes or so can make the crumble mixture easier to work with while creating a better texture.
How to store vegan fruit crumble bars.
When fully cooled, leftover bars should be stored in an airtight container.
If properly stored, they should keep for about a week when refrigerated or up to a few months when frozen. Note that it is a good idea to separate layers of bars with parchment paper.

Ingredients needed to make a vegan crumble base.
- Flour. All purpose flour was used to make my bars. You can use an alternative flour, such as all purpose gluten free flour, as long as it measures and bakes like all purpose flour.
- Baking Powder. Added for leavening.
- Ground Cinnamon and Ground Nutmeg are added for flavoring.
- Light Brown Sugar. Use a vegan friendly brown sugar or an alternative that measures and bakes like regular light brown sugar.
- Coconut Oil. The coconut oil should be melted. A vegan butter can also work in this recipe.
- Water. Regular tap or similar water should work.
Filling ingredients for crumble bars.
- Peaches. The peaches should be rinsed, dried, and sliced into quarter inch wide slices, with the pits removed. Removing the skin is optional.
- Blueberries. Fresh blueberries are preferred. Your blueberries should be rinsed and drained.
- Optional: a small amount of cornstarch can be used as a thickener if needed although some of the moisture from the fruit will bake off.
Crumble topping ingredients.
- Rolled Oats. Rolled or old fashioned oats work best in a crumble.
- Flour. Again, all purpose flour was used to make my bars. You can use an alternative flour, such as all purpose gluten free flour, as long as it measures and bakes like all purpose flour.
- Light Brown Sugar. Makes the topping sweet.
- Ground Cinnamon. Added for extra flavor.
- Coconut Oil. The coconut oil should be melted.
- Water. Regular tap water can be used.
Expert Tip👉 Coconut oil or vegan better work best for both flavor and moisture in this recipe. Using an oil will not work as well in this recipe however.
How to make Vegan Fruit Crumble Bars
Active Time: 15 minutes
Bake Time: 35 minutes
Servings: 12.
- Preheat your oven to 350 and prep a square baking pan for nonstick. I like to use parchment paper that has also be sprayed with nonstick spray or greased. for a recipe such as this one.
- To make the base, in a large bowl, use a fork or a whisk to combine together the flour, baking powder, cinnamon, nutmeg, and light brown sugar.
- Once combined, stir in the melted coconut oil and water and mix until the ingredients form a crumbly texture.
- Transfer the base ingredients to your prepared baking pan and press the them into the pan until a flat and even base if formed.
- To make the filling, simply place the sliced peaches and berried evenly over the base.
- For the crumble topping, in a mixing bowl, combine together the topping ingredients until very small crumbles are formed. Then use your hands to toss the ingredients until the crumbles become pea-sized. Sprinkle the crumbles evenly over the fruit filling.
- Bake your crumble for 30-35 minutes or the crumble topping turns golden brown. Then place the baking pan on a wire cooking rack to finish cooling (about 20-25 minutes).
Expert Tip👉 This crumble can be stored in a refrigerator however, the topping will not stay crisp. You can make additional topping that is crisp when your serve the crumble or simply sprinkle chopped nuts or granola on top for that crunch.
