What is a quick bread?
The main difference between a quick bread and a yeasted bread is how they are leavened. Leavening is the process of introducing air or gas into baked food such as bread to cause it to rise and to create a light and airy texture in baked goods.
There are three main types of leavening agents:
Yeast produces carbon dioxide gas as it ferments causing dough or batter to rise.
Baking soda reacts with acids to produce carbon dioxide gas which becomes trapped in the batter or dough, causing it to rise.
Baking powder is made with baking soda and cream of tartar which form carbon dioxide gas in the batter or dough, causing it to rise.
Quick breads are made with baking soda or baking powder which take less time to cause a reaction to cause leavening. Yeast breads on the other hand, take longer to make as the yeast needs more time to react in the leavening process.
Tips for making this old fashioned nut bread recipe.
My bread was made with regular all purpose flour. You can however, use whole wheat all purpose flour or gluten free all purpose flour, with or instead of the all purpose flour to make this recipe.

Once this bread has fully cooled, you store it in an airtight container or wrapped. If properly stored, this bread should keep for a couple of days at room temperature, up to five days refrigerated, or up to a few months when frozen.

However, you can make yours even better.
- Add raisins or another dried fruit to the bread for a fruity touch.
- Use another kind of nut with the walnuts for more flavor.
- Make this recipe in individual loaf pans and serve individually (adjusting baking time as needed).

- Flour. All purpose flour was used to make my bread. To make this bread friendlier to the Mediterranean diet, you can use whole wheat all purpose flour that measures like all purpose.
- Baking Powder. This is used for leavening.
- Ground Cinnamon. Added for a bit of extra flavor.
- Maple Syrup. This is added as a sweetener and for flavor.
- Banana. Use an overly ripe banana as it will need to be mashed.
- Oil. Added for moisture. A neutral oil such as vegetable oil.
- Oat Milk. This is the vegan milk of choice for this recipe.
- Vanilla Extract. You can find vegan vanilla extract here.
- Walnuts. Chopped walnuts should be used as they are easiest to eat in a bread.
Expert Tip👉 You can easily chop your own walnut or purchase walnuts already chopped. If you are going to use a strong blender or food processor it is best to use a pulse speed as over processing the walnuts can make walnut butter rather than chopped walnuts.
How to make this Easy Walnut Bread Recipe.
Makes: 1 loaf (about 10 slices)
Prep Time: 10 minutes
Bake Time: 50 minutes
Total Time: 60 minutes
- Preheat your oven to 350. Prepare your loaf pan for nonstick. I like to use parchment paper that overhangs the sides of the loaf pan in a recipe like this one.
- In a medium bowl, use a whisk to combine together the flour, baking powder, and ground cinnamon.
- Next, in a mixing bowl, beat together the banana with the maple syrup and oil until creamy. Then stir in the oat milk and the vanilla extract.
- Add the dry ingredients from the first bowl to the mixing bowl and mix until just incorporated. Then fold in the walnuts.
- Transfer the mixture to your prepared loaf pan and baking for 45-55 minutes or until a toothpick comes out clean.
- Allow the loaf to site for 20 minutes in the loaf pan before transferring it to a wire rack to finish cooling.
Expert Tip👉 This bread is best when served at room temperature. If you are storing your walnut bread in your refrigerator or freezer, it is a good idea to let it sit out to get to room temperature before slicing and serving. This will help to prevent the bread from becoming dry and crumbly.
