My recipe calls for chicken breasts used just out of the package. You can make your chicken breasts more tender by using a meat tenderizing mallet on it.
Here are some more great tips for you.
- My recipe calls for using basic chicken stock. You can however, use any stock of your choice including a low sodium stock or a vegetable stock.
- Spice your lemon honey chicken up by adding red pepper flakes. Simply stir in a small amount of the flakes while you are sautéing the garlic.
- While my chicken was cooked in a skillet on a stove. This recipe can also work when cooked on a grill or in a Foil Packet . Cooking times can vary however.

Leftover cooked chicken breast should be stored in an airtight container. If properly stored, it should keep for up to four days in a refrigerator or up to three months when frozen.

This is a simple chicken recipe that is friendly to the Mediterranean diet and can be made in in less than a half hour total. Cooking this recipe is done on a stove in less than 20 minutes.

- Serve this chicken as is over a mound of cauliflower rice.
Ingredients needed to make Mediterranean Diet Lemon Honey Chicken Breast
- Chicken. Use skinless and boneless chicken breast.
- Flour. Used to make a light coating for the chicken.
- Seasonings. Added to the flour, this includes salt, pepper, and paprika (feel free to customize this).
- Olive Oil. A similar neutral oil can be used but, olive oil adds a nice flavor to this chicken recipe. Optional- you can sub in butter for part of the olive oil to add flavor. Note that butter is not always the best choice however on the Mediterranean diet.
- Garlic. The garlic should be minced.
- Chicken Stock. You can sub in another stock as desired.
- Lemon Juice. Use freshly squeezed lemon juice for the best flavor.
- Honey. Use the honey of your choice. I like to use local honey when I can.
- Lemon. The lemon should be sliced in one quarter to half inch slices that are again sliced in half to make a 'half moon'.
- Option- chopped cilantro or similar herb.
Expert Tip 👉 Adjust the amount of honey and lemon juice according to your taste preference. If you like it sweeter, add more honey; if you like it tangier, add more lemon juice
How to make Mediterranean Diet Lemon Honey Chicken Breast
Prep Time- 10 minutes
Cook time – 20 minutes
Total Time- 30 minutes

- Prepare the chicken by slicing the breasts lengthwise to get four pieces of chicken.
- In a shallow bowl, use a fork or a whisk to combine together the flour with the seasonings (paprika, salt, and pepper).
- Next, heat two tablespoon of the olive oil in a large skillet on medium heat.
- While the skillet is heating up, carefully dredge the first piece of chicken through the flour mixture, tap the excess flour off back into the bowl, and place the chicken breast into the skillet. Repeat this process with the remaining chicken.
- Cook the chicken until it is golden brown (about four to five minutes per side). Then place the chicken on a clean place.
- While the chicken is cooking, combine together the chicken stock, honey, and lemon juice in a bowl.
- Add the remaining oil to the warm skillet along with the garlic and saute for about two minutes or until fragrant. Then add the remaining ingredients to the skillet ( combined stock, honey, lemon juice, along with the lemon slices). Bring the skillet ingredients to a boil and then to a simmer for five minutes for the liquid to reduce.
- Turn the stove down to low and add to the skillet the chicken that you previously cooked.
- Cook the ingredients for about three minutes for the chicken to reheat and absorb the other ingredients before serving.
Expert Tip👉 To thicken your sauce, simple add a tablespoon of cornstarch with a tablespoon of water to the sauce while the ingredients are simmering.
