- Breadcrumbs as used in this recipe to help keep these meatballs from getting soggy. However, I often sub in oatmeal for part of all of the bread.
- Lastly, we are adding additional flavor to this recipe by using Italian inspired seasonings and sauce.
What kind of sauce should you use for chicken meatballs?
My first choice may be to use marinara sauce. This is a sweeter sauce that is thick and helps to balance out the fact that chicken does not have the richness in flavor as beef.
However, there are other sauces that could work in this recipe as well.
A simple tomato sauce would probably work find. But, I would also probably add additional seasoning to that simple tomato sauce for my personal taste.
How to store leftover meatballs.
These meatballs can be frozen or refrigerated. I would place them in an airtight container or bag where they should keep refrigerated for a few days and for up to a few months frozen if properly stored.

Ingredients needed to make Baked Chicken Parmesan Meatballs
- Egg- 1 large.
- Breadcrumbs- ½ cup. I often use oats for part or all of my breadcrumbs for a more moist texture.
- Parmesan Cheese- ¼ cup, grated.
- Mozzarella Cheese= ¼ cup grated or shredded. Feel free to adjust cheese amounts as needed.
- Basil- 2 tablespoons chopped. Fresh basil is preferred.
- Garlic- 2 cloves minced or chopped.
- Seasonings- 3-4 teaspoons or as desired. Seasonings as desired. This can include Italian Seasonings, Mediterranean Diet Seasoning Blend, Salt, and/or Pepper.
- Olive Oil- 2 tablespoons or as needed.
- Chicken- 1 pound, ground. As mentioned, you can use any poultry or meatless ground alternative instead.
- Sauce- for serving.
How to make Mediterranean Diet Chicken Parmesan Meatballs.
- Start by preheating the oven to 400 and prepping a rimmed baking sheet for nonstick. You can use the olive oil to do this.
- In a large mixing bowl, beat the egg using a whisk or a fork. Then mix in the breadcrumbs, cheeses, basil, and seasonings.
- Work the ground chicken into the mixture in the bowl. I really like to use my hands to do this as it is just easier to do and everything gets well blended. You can drizzle oil over your hands to keep the mixture from sticking too much.
- When you are able to form balls, about about the size of a golf ball, place the balls onto the prepped baking sheet. Then drizzle olive oil over the meatballs so that they are covered as this will help them from a more crisp outside.
- Bake the meatballs for 20-22 minutes, or until the internal temperature registers 165F on an instant read thermometer.
- You can serve the chicken meatballs with sauce or as desired.
