    This recipe is for individual chicken bread dinner that has been cooked with vegetables in a foil packet. The chicken packets can be cooked on a campfire, grill, or in an oven.

    Vegetables that can go into a chicken packet include:

    • Small potatoes.
    • Asparagus.
    • Broccoli.
    • Peppers.
    • Corn kernels.

    Expert Tip 👉 It is important that your foil packets can be securely sealed before cooking the chicken. Do not pack in too many vegetables with the chicken if the packets cannot seal fully.

    Ingredients needed to make Foil Pouch Chicken Breasts.

    • Chicken breasts. With the skin for a more tender chicken. You can remove the skin before eating the chicken.
    • Small potatoes. My packets were made with baby red potatoes that were quartered. I scrub my potatoes and leave the skin on.
    • Asparagus. The asparagus stalks should be sliced in half lengthwise. As mentioned, you can use the vegetable(s) of your choice as long as you can secure the foil for cooking.

    Ingredients needed to make the marinade.

    • Honey. Maple syrup can alternatively be use but, you will need less of it.
    • Soy Sauce.Use a low sodium soy sauce if possible.
    • Garlic. The garlic should be minced or chopped small.
    • Olive Oil. Extra virgin olive oil can be used.
    • Seasonings as desired.

    How to make Foil Packet Chicken Breast Dinner.

    Prep time: 15 minutes
    Cook time: 30 minutes

    • Prepare your chicken as needed for cooking. Place the chicken into a large zip top bag(s). Also prepare your potatoes and asparagus if you have not done so.
    • To make the marinade, place the marinade ingredients in a medium bowl and use whisk to mix them together. Then pour the marinade over the chicken and secure the top of the bag. Refrigerate the chicken in the marinade for at least a half hour.
    • To prepare the pouches, lay out each of the foil sheets on a flat work space.
    • Place a chicken breast in the center of each of the foil sheets and then surround the chicken with the other ingredients. Pour the marinade over the ingredients and and then secure the foil packets well so that the marinade stays inside of the foil.

    How to cook chicken packets in an oven or on a grill or campfire.

    • Oven method- Preheat your oven to 400. Place the chicken foil packets on a baking sheet and bake for for 20-25 minutes or until no longer pink.
    • Campfire method- This works best on a campfire that is about a half hour old. Place the foil packets on the coals/grates/skillet and cook for 20-25 minutes, or until the chicken is cooked through
    • Grill Method- Preheat the grill on medium. Place your chicken packets on to your grill and cook for 20-25 minutes or until the chicken is cooked through.
    • Carefully open up cooked the packets and to allow the chicken rest for a few minutes before serving.

    Ingredients

    • 4 Chicken Breast
    • 1 ½ lbs Potatoes - such as baby red
    • ¾ lb Asparagus

    For marinade

    • ½ cup Honey
    • 2 tbsp Apple Cider Vinegar
    • 2 tbsp Soy Sauce - low sodium
    • 2 tbsp Minced Garlic
    • 3 tbsp Olive Oil
    • 2 tsp Seasonings as desired

    Instructions
