- My salad was made with white meat chicken breast. Feel free to use the chicken of your choice or omit the chicken entirely
- The easiest way to prepare the chicken if you do not have freshly made chicken or leftovers to use, is to purchase a rotisserie chicken. Alternatively, you can purchase already cooked chicken strips to use in this recipe.
- Do you not want to use chicken? Try this salad with salad shrimp, cooked salmon, grilled tofu or even with vegan chicken alternative.
How to store leftover salad.
This salad should really be served immediately, especially once your have added the dressing. If you do have leftovers, do not add the dressing and instead, store the salad in an airtight container or zip top bag. It is best to add the vinegarette dressing just before serving the salad.

About this Easy Chicken Salad.
There are really two parts to this salad.
One part is to actually make the salad while the second part is making the vinegarette dressing.
Grilled chicken is added to this salad as a source of protein.
You can grill the chicken fresh or use already grilled chicken.
The other ingredients added to this salad offer a variety of colors as well as flavors to this recipe.
Ingredients needed to make Mediterranean Diet Chicken Salad
- Chicken Breast. The grilled chicken bread should be sliced into bite sized pieces.
- Spring Mix. You can get away with using a bagged spring mix.
- Romaine Lettuce.. Clean your romaine and then chop it into bite sized pieces.
- Bell Pepper. Remove the seeds before slicing the pepper thin.
- Onion. A flavorful red onion works well. Slice the onion thin as well.
- Tomatoes. My salad was made with sliced cherry tomatoes. Grape tomatoes or a similar tomato would also work.
- Feta Cheese. Really, Parmesan, Asiago, or any similar cheese could also work.
- For the dressing you will need extra virgin olive oil, apple cider vinegar, lemon juice, seasonings, and dijon mustard.
Expert Tip👉 Feel free to omit any of the listed ingredients or add ingredients in addition as desired.
How to make Mediterranean Diet Chicken Salad
Prep Time: 15 minutes

- Whisk or combine the vinaigrette ingredients together. Set this aside while you assemble the salad.
- Prepare the ingredients as indicated. This include slicing the chicken and other ingredients that also need to be sliced.
- To prepare the salad, first place your spring mix and the romaine in a large bowl. Use a salad tong or similar item to toss the lettuces together.
- Layer the remaining ingredients, except for the chicken, dressing and cheese, over the lettuce and toss again.
- If you are not serving the salad yet, cover it up and refrigerate it and the vinegarette separately.
- Before serving this salad, drizzle a small amount of shaken or whisked vinaigrette over the salad ingredients. Toss the ingredients and that repeat.
- Top the salad with the chicken and cheese before serving.
Expert Tip👉 Make this recipe ahead of time. Simply cover and refrigerate without adding the vinegarette dressing, chicken, and cheese. Then when you are ready to serve, you can add these ingredients.
