Caprese Stuffed Chicken made in an Air Fryer.

This delicious meal is kind of like a marriage of two favorite Mediterranean classic recipes.

Air fried chicken breast stuffed with tomatoes and mozzarella makes for a satisfying meal.

Did you try my recipe for Mediterranean Diet Caprese Salad ?

That vegan caprese salad features Roma tomatoes and avocado. Both this recipe for air fried chicken and that recipe for salad are wonderful recipes featuring the great taste of caprese.

This recipe is made in an air fryer. You can find air fryer accessories that may be helpful here.

Frequently asked questions about air frying chicken.

Can you cook chicken in an air fryer?

Yes, you can cook chicken in you air fryer.
Air frying chicken is a quick and simple method for making it as well.

What you should know is that the chicken should first be prepared in sanitary conditions just as you would prepare it for other methods.
Also, after the chicken has been cooked, clean your cooled air fryer basket before using it again.

How long should you cook chicken for in an air fryer?

As a rule of thumb, chicken should be cooked until it has reached an internal temperature 165 (USDA) and is no longer pink on this inside.

In this recipe, when air fried at 350 degrees, that should take about 12 minutes.
To help your chicken air fry, make sure that the air fryer basket is not crammed with chicken (there is space between the chicken) and that the chicken is flipped about halfway through air frying.

Tips for making air fryer chicken.

This recipe can be prepared in advance by marinating the chicken breasts. You can prepare the optional balsamic marinade and place it into a zip top bag with the chicken in your refrigerator until you are ready to air fry.

Here are some more great tips for you.

    1. If you decide to refrigerate the chicken breasts in a balsamic marinade be sure to dispose of the marinade when you remove the chicken from the bag. Also, the marinated chicken should be using within 24 hours.
    2. I like to give my basket a quick spray with oil before making a recipe such as this one. Another option is to use an air fryer liner.
    3. When placing the chicken into your air fryer basket, leave plenty of space between the breasts so that the air can circulate and bake your chicken. If your chicken is too large to do this then consider making this recipe in batches instead.

    How to store Caprese Chicken.

Leftover chicken should be stored in an airtight container. If properly stored, it should keep refrigerated for about four days or three months frozen.

Air Fryer Caprese Stuffed Chicken, a simple and delicious lunch or dinner recipe for stuffed chicken breasts topped with balsamic glaze

About this recipe for air fried chicken breast.

This is a simple recipe for making chicken breasts in an air fryer in about 20 minutes.
Once the chicken has been cooked, it can be stuffed with the tomatoes and cheese.

The chicken marinade step in this recipe is optional but, can be done up to a day in advance of air frying the chicken.

This recipe is delicious with or without the marinade step.
Lastly, the stuffed chicken is topped with a simple balsamic vinegar reduction glaze that is drizzled on top.

Ingredients needed to make Caprese Stuffed Chicken in an air fryer.

    • Chicken Breasts. Carefully use a knife to make four slits in each breast. The slits should be about three quarters of the way through the chicken breast.
    • Olive Oil. This is used to air fry the chicken with.
    • Seasonings: Garlic Powder, pepper, and Italian seasonings. If you will be marinating your chicken breasts, split the seasoning as needed to not not overpower the flavor of the chicken. Up to four teaspoons.
    • Mozzarella Cheese. My chicken was made using slices of cheese however, grated could probably work as well in this recipe.
    • Tomatoes. Use firm tomatoes that have been sliced. I like Roma for this recipe as they have the true flavor of caprese and they are the perfect size.
    • For the balsamic glaze- Balsamic Vinegar and Brown Sugar.
    • Optional Marinade- Olive Oil, Balsamic Vinegar, and minced garlic. You can also add half of the seasonings to the marinade.

How to make Air Fryer Caprese Stuffed Chicken

    Prep Time-10 minutes
    Cook Time-20 minutes
    Total Time-30 minutes
    Servings-2

    • Prepare the chicken as directed (pat dry if needed and make the slits). If you are marinating the chicken, place them into a zip top bag and with the marinade ingredients and refrigerate for up to one day in advance.
    • Drizzle or coat the chicken breasts with the olive oil. You can also brush or spray the air fryer basket with the oil. Note that if you are using marinated chicken breasts, you do not need to coat them with the oil. Instead, remove the chicken from the bag and dispose of the bag and its contents.
    • Preheat your air fryer to 350 and let it get to temperature (about five to six minutes).
    • To cook the chicken breasts, place them into the fryer basket and cook until they reach 165 degrees internally and they should no longer be pink. Also, flip the chicken over about five minutes into air frying. It should take about 10-12 minutes total to cook.
    • Stuff the chicken slits with the tomato slices and the cheese and then return the chicken to your air fryer for about another two minutes for the cheese to melt.
    • Serve the chicken breasts with the balsamic glaze drizzled on top.

    How to make Balsamic Glaze.

To make the balsamic glaze, simply heat balsamic vinegar and brown sugar in a pan over medium heat bringing it to a boil. Once the mixture has boiled you can bring it to a simmer until it has reduced to about half. Allow the glaze to cool before drizzling it over your chicken.

Expert Tip👉 You can make the balsamic glaze reduction while the chicken is air frying. This will give the glaze enough time to reduce and cool before adding it to the chicken.
