Sweet and Savory Brussels Sprouts Slaw made with no mayo.

Unlike the usual slaw recipe, this one includes apples and walnuts.

I really like the balance of flavors, colors, and textures in this simple recipe.

Did you try my recipe for Asian Coleslaw With Peanut Butter Dressing ?

That simple slaw recipe is made with shredded cabbage and carrots tossed in a flavorful peanut butter vinaigrette. Both this brussels sprouts slaw and that Asian slaw recipes are delicious and friendly to the Mediterranean and vegan diets!

This recipe appreciates the roasted walnuts for both flavor and a bit of crunch. You can find a selection of roasted walnuts here.

Frequently asked questions about Brussels Sprouts.

    What are Brussel Sprouts?

Brussel sprouts are a member of the cabbage family.
They are actually the buds of of a plant rather than the plant leaves.

Brussels sprouts have a more bitter taste than other cabbages thanks to their size being more dense. The can be served raw, such as in this recipe, or cooked until tender.

Are brussel sprouts healthy for you?

Brussel sprouts are low in calories (one cup has about 40 calories).
They are also relatively low in carbohydrates (about 4 per cup).

This cabbage family member is a source of Vitamins such as B6 and potassium. However, it is the Vitamin C content in brussels sprouts that experts say hits the home run for healthy for this vegetable!

Tips for making this recipe for brussels sprout slaw.

Shredding fresh brussel sprouts is easier if you use a food processor or mandoline to do it. However, many grocery stores also sell already shredded sprouts in the produce section.

Here are some more great tips for you.

    1. The roasted walnuts really add a lot to this recipe as far as texture and taste go. You can roast your walnuts for about eight minutes at 350, checking and stirring them as needed.
    2. This slaw recipe really tastes good if you toss the ingredients (except for the nuts) with the dressing and refrigerate the salad for about a half hour to allow the ingredients to set together. Then add the walnuts before serving.
    3. Adding dried fruit can also add to the color, texture, and flavor of this recipe. I like raisins or cranberries in this recipe .

How to store brussels sprouts slaw.

This slaw should be stored in an airtight container and refrigerated, if possible without the walnuts and dressing. If stored tossed with the dressing it should keep for about a day and for a few days without the dressing.
