Tips vegan almond flour cookies with maple syrup
Oat flour is used in addition to the almond flour in this recipe to make this a more flavorful and softer cookie to enjoy. However, oat flour does not measure 1:1 with almond or all purpose flour. This means that in order to substitute another flour for the oat flour, you will need to use one that measures 1:1 with oat flour such as Cassava flour.
Here are some more great tips for you.
- Use a good quality almond flour. This will make a big difference in the taste and texture of the cookies.
- Maple syrup also does not measure the same as other sweeteners. This means that less maple syrup is needed to achieve the same level of sweetness as other sweetening ingredients. Keep in mind that maple syrup is used as a binder and also as a wet ingredient in this recipe.
- After you take the cookies out of the oven, allow them to sit on the baking sheets for a few minutes before removing them. This will allow the cookies to set as needed.

This is a simple recipe for vegan cookies that is flavored with maple syrup, almond butter, and almond flour. It takes about a half hour to make this cookie recipe.

Ingredients needed to make Easy Almond Flour Cookies.
- Almond Flour. Added both for flavor and as an alternative to all purpose flour.
- Oat Flour. This is added for texture and for a bit of protein.
- Baking Soda. This is added for leveaning.
- Almond Butter. Creamy almond butter with no added sugar is preferred. If you are using unsalted almond butter, add a half teaspoon of salt to the dry ingredients.
- Maple Syrup Used as a sweetener, a wet ingredient, and for flavor. Any substitute should be a wet ingredient that measures like maple syrup for best results.
- Vanilla Extract. Added for a bit of flavor balance.
- Optional add ins- chopped almonds or vegan chocolate chips.

How to make Easy Almond Flour Cookies
Makes: 24 cookies
Prep Time: 15 minutes
Bake Time: 12 minutes
Total Time: 27 minutes
- Start by preheating your oven to 350 and prepping your baking sheet(s) for nonstick. I like parchment paper or a baking mat for this recipe.
- In a medium bowl, use a whisk to combine the almond flour, oat flour, and baking soda.
- Next, in a mixing bowl, beat together the almond butter and syrup until creamy. Then stir in the vanilla extract.
- Add the dry ingredients from the first bowl to the mixing bowl and mix until just combined. Then use a cookie scoop to scoop out the dough, roll the dough between your hands and then place the dough on the the cookie sheet. Use the palm of your hand or the bottom of a cup to carefully press each of the cookie dough balls about ⅔rds of the way down.
- Bake the cookies for 10-12 minutes or until the edges turn golden brown.
Then allow the cookies cool on the baking sheet for a five minutes before transferring them to a wire rack to cool completely.
Expert Tip👉 You can use a fork to make a criss-cross pattern on top of the cookies before placing them into the oven.
