    Vegan matcha energy protein balls are a quick and nutrient-dense snack idea made with plant based ingredients. It takes about ten minutes to make this recipe using a food processor to mix the ingredients before rolling them into balls.

    • Wrap these balls into on-the-go portions to pack into a lunch box or share with others.
    • Drizzle melted chocolate over these and serve them at a party or potluck.
    • Break one up and sprinkle it over Vegan Almond Milk Ice Cream .

    Ingredients needed to make no bake matcha balls.

    • Peanut Butter. Use a creamy butter for easier blending of ingredients. I also look for peanut butter with no added sugar so that I can control the sweetness.
    • Almonds. Almond give these balls a nice crunchy element. Use raw almonds as they have no added ingredients in them.
    • Coconut. Shredded coconut adds flavor and a bit of texture to this recipe.
    • Pumpkin Seeds. Really, about any kind of seed can be used to make your matcha energy balls however, raw pumpkin seeds were used to make mine.
    • Matcha Powder. Culinary grade matcha powder works find in this recipe and it is a bit more affordable.
    • Maple Syrup. This is an important ingredient as it is used as the sweetener to balance out the ingredients as well as a binder to hold them together.

    Expert Tip 👉 Date paste can be used in place of the maple syrup in this recipe. However, the amount of the paste will most likely need to be increased as they are not measured 1:1 .

    How to make Vegan Matcha Energy Protein Balls

    Active Time: 10 minutes.
    Servings: 24.

    1. Give your peanut butter a quick stir to loosen it up. If you are using organic peanut butter, use a fork to stir it as organic peanut butter usually comes with extra oil.
    2. In a food processor of good blender, combine together the almonds, shredded coconut, and pumpkin seeds. Pulse the ingredients until well chopped.
    3. Next, add the peanut butter to the mixture an pulse a few times. Then, add the maple syrup and matcha powder and pulse the ingredients until well combined.
    4. Line a rimmed baking sheet with a mat or parchment paper.
    5. Use a cookie scoop to scoop out the mixture and then roll the scooped ingredients between your hands into a ball.
    6. Place the rolled ball on to your prepare baking sheet to set. You can roll the ball into additional chopped nuts or coconut for additional flavors and textured before setting the ball on the sheet..
    7. You can place the baking sheet with rolled balls into your refrigerator for ten minutes to help them set.

    Expert Tip 👉 Adding a scoop of raisins to the mixture before rolling can add a bit of flavor to the mix and help give your matcha balls a more chewy texture.
