What are the different kinds of leavening agents for baking?
Leavening agents or leaveners are used in baked goods to introduce air or gas in order to make something rise while it bakes. When a leavening agent is not used, whatever you are baking will most likely turn out flat rather than airy and tender.
Common leavening agents include:
- Yeast .
- Baking Powder.
- Baking Soda.
- Egg Whites that have been whipped.
- Starter (sourdough).
- Potassium Bicarbonate.
- Steam.
Yeast breads rise when yeast is used for leavening to producing carbon dioxide gas (fermenting), which causes the dough to rise. These kinds of breads are a bit more work as they need time for proofing and rising.
Quick Breads on the other hand, use chemical leaveners (baking powder or baking soda). These leaveners react with acids that are added to the batter (such as buttermilk or yogurt). The reaction of these ingredients produces carbon dioxide gas quickly which means that there is no need for the lengthy rising that is needed for yeast recipes.
Yeast breads tend to be more flavorful, more dense, and more chewy.
Quick breads are more mild in flavor, more tender, and will have more crumbs.
While yeast breads can produce a more sophisticated kind of bread, quick breads can be easily customized with other ingredients and made in less time.
Tips for making vegan rolls from scratch.
Coconut oil is used for both the filling and the pan sauce in this recipe as it offers both moisture and flavor to the recipe. You can however use a vegan butter that can be baked with if you prefer.
Here are some more great tips for you.
- Because this recipe uses yeast for leavening, you will need to wait about an hour for the dough to rise in order to make the rolls. This wait time may be a good time for you to prep the other ingredients such as the apples.
- The dough for these rolls can be prepared ahead of time. Before allowing the second rise to happen you can simply cover the baking pan with plastic wrap and place it into your refrigerator overnight. When you are ready to make your rolls, remove them from your refrigerator and allow the rolls to get to room temperature before continuing with the instructions.
- Adding nuts or topping with a vegan icing are options that can work for these rolls. You can also serve them with a bit of maple syrup.
- Make this recipe more friendly to the Mediterranean diet by using whole wheat all purpose flour, less sugar, and canola oil.

Ingredients needed to make Vegan Apple Cinnamon Rolls.
This recipe is made in three parts with ingredients needed for each part.
- Making the dough for the rolls.
- Coating the baking pan with a sweet pan sauce.
- Adding a cinnamon apple filling to the dough to make the rolls.
Ingredients needed to make vegan roll dough.
- Active Dry Yeast. This is added for leveaning. Please make sure that you are using 'active dry yeast' as other leaveners are not suitable for this recipe.
- Brown Sugar. Use a 'vegan' brown sugar to keep this recipe vegan. Maple syrup will not work as a substitute.
- Almond Milk. Any kind almond milk should work in this recipe.
- Flour. All purpose flour was used to make my rolls. You can use an alternative flour, such as gluten free all purpose flour, as long as it measures and bakes like regular all purpose flour.
- Salt. A small amount is added for balance. Coarse salt, such as Kosher salt, works well in this recipe.
- Vegetable Oil. This is added to the dough for moisture.

The ingredients needed to make pan sauce for vegan rolls.
- Coconut Oil. An alternative vegan oil can be used but, cooking time and flavor may differ.
- Almond Milk. As the milk will be heated, almond milk works best in this recipe.
- Brown Sugar. This will give the rolls that 'caramel' coating to make them 'gooey'.
Ingredients used to make vegan roll filling.
- Coconut Oil A vegan butter can also work.
- Apple Pie Spice. If you do not have this, you can simply use cinnamon and nutmeg to make these rolls.
- Brown Sugar. Also adds to the 'gooey' texture of these rolls.
- Walnuts. These should be chopped. Pecan can also work in this recipe.
- Apples. Your apples should be peeled and then chopped for this recipe. I like to use a tart apple such as Granny Smith, and a sweet apple,such as Fuji, for a nice balance.
How to make Amazing Cinnamon Apple Sticky Rolls
Serves: 12
Total Time: 2 hours 40 minutes
Rest Time: 1 hour 45 minutes
Active Time: 30 minutes
Bake Time: 25-30 minutes
How to make the dough for vegan apple rolls.
- Place the yeast in a small mixing bowl. In a microwave safe bowl, heat the almond milk to around 100 degrees. You can alternatively use your stove to heat the almond milk.
- Once the almond milk has warmed, you can carefully whisk in the brown sugar before pouring the combined ingredients over the yeast in the mixing bowl.
- Meanwhile, while you are waiting for the yeast to activate, use a fork or clean whisk to combine together the flour and the salt in a large mixing bowl. Once the yeast mixture from the small mixing bowl begins to bubble, you can transfer it to the larger mixing bowl with the flour and salt. Mix this combination until just combined.
- Lastly, add the vegetable oil to the large mixing bowl and blend until combined and a dough forms.
- Transfer the dough mixture to a clean work space that has been dusted lightly with flour. Knead the dough until it is smooth and elastic or stretchy in appearance. This should take about five to seven minutes. Then roll the dough into a large ball.
- Place the dough ball into a large bowl that has been lightly greased with oil (to keep the dough from sticking- any vegan oil should work).
- Cover the dough with a damp clean kitchen towel and allow the dough to double in size. I like to place my dough in a high location, such as on top of my refrigerator, while it rises. It will take about an hour for your dough to rise to double its size.
Expert Tip👉 To heat the almond milk without making it curdle, you can use a microwave. It should take about a minute for the almond milk to heat. I would stop about halfway to carefully stir the milk with a fork or small whisk as well as after taking it out of of the microwave.
How to make vegan pan sauce.
- Start by preparing your baking pan. You can simply grease it with oil just as you did with the bowl while making the dough.
- In a small saucepan on medium heat, combine together the coconut oil, almond milk and brown sugar.
- Use a whisk to constantly mix the ingredients while they heat in the saucepan on the stove.
- Once the mixture in the saucepan begins to bubble and the sugar has fully dissolved, you can carefully transfer it to the baking pan that you prepared in the first step.
- Use a spoon or pastry brush to evenly spread the mixture over the bottom of the pan.
Expert Tip👉 The pan sauce adds a base for the rolls to bake on top of. This also gives a nice flavorful surprise when you are enjoying the rolls.
How to make cinnamon apple filling for rolls.
- Place the diced apples in a mixing bowl and then add the chopped walnuts to the bowl.
- Gently toss the ingredients to evenly spread them around the bowl.
- Next, in a small mixing bowl, use a whisk to combine together the remaining sugar and the apple pie spice.
- Once combined, transfer the sugar mixture to the bowl with the apples and walnuts and toss the ingredients again to evenly mix them.
Expert Tip👉 You can add up to a teaspoon of vanilla extract for a bit of flavor balance to these ingredients.
How to assemble and bake vegan apple rolls.
- Roll the dough out on a clean and floured surface. To fit the dough in a 9X13" baking pan you will need to roll it to about 14X20".
- Carefully melt the remaining coconut oil and then brush it over the dough using a pastry brush.
- Evenly spread the apple filling ingredients over the dough to about a quarter inch from the edges of the dough.
- To roll the dough, start on the long (20") side of the dough rectangle. Carefully, and tightly, roll the dough into a log. Some people like to roll towards themself while others find it easier to roll the dough away.
- Once your dough is fully rolled, you can rotate it so that the seam is on the bottom.
- Use a sharp knife, serrated knife, or dental floss (no coating or flavoring) to cut the rolls from the rolled dough. To make the cuts evenly, first cut the rolled dough in half and then continue to cut the pieces in half until you have 12 rolls cut from the dough.
- Place the cut rolls into your prepared baking pan so that the rolled inside is visible and the doughy outsides face one another.
- Cover the baking pan with a damp clean towel or plastic wrap and allow it to double in size again (about a half hour.
- When you are ready to bake the rolls, preheat your oven to 350°F.
Remove the covering from the baking pan and bake the rolls for 25-30 minutes or until the rolls begin to turn golden brown on top. - Allow the rolls to cool before serving.
Expert Tip👉 You easily top these rolls with an icing made with powdered sugar (one cup) mixed with maple syrup (a half tablespoon) using vegan milk as needed to get to your desired consistency.

- 2 ¾ cup Flour
- ½ tsp Salt

- 3 tbsp Coconut Oil
- 2 tbsp Almond Milk
- ⅓ cup Brown Sugar

- 3 tbsp Coconut Oil
- 3 tsp Apple Pie Spice
- ½ cup Brown Sugar - packed
- 1 cup Walnuts - chopped
- 2 Apples - skin removed and diced.
