This is a simple recipe for muffins that is made with both oat flour and oats.
Mashed bananas are added for flavor, moisture, and to help hold the ingredients together.

This recipe can be made in a standard muffin pan.

If you decide to use a mini muffin pan or jumbo muffin pan simple adjust your baking time as needed. This recipe is also vegan, gluten free, soy free, and Mediterranean diet friendly.

  • Baking Powder. Adds air to the muffins to help make them fluffy.
  • Ground Nutmeg and Cinnamon. Added for flavor.
  • Brown Sugar. Use dark vegan brown sugar that is packed.
  • Bananas. Use over-ripe bananas that have been mashed.
  • Almond Milk. Other vegan milk alternative could work in this recipe.
  • Canola Oil. Vegetable oil can alternatively be used.
  • Vanilla Extract. Added to help balance out the flavors.
  • Rolled Oats. These add flavor and texture to this recipe.

Makes: 12 muffins
Prep Time: 10 minutes
Bake Time: 30 minutes
Total Time: 40 minutes

  • Preheat your oven to 350. Prepare your muffin pan well for nonstick.
  • In a small bowl, use a whisk or a fork to mix together your oat flour, baking powder, and spices.
  • Next, in a large mixing bowl, beat together your mashed bananas and brown sugar until smooth and lump-fee. Then you can mix in your almond milk, oil and vanilla extract until combined.
  • Add the dry ingredients from the first bowl to the large mixing bowl and mix until just combined. Lastly, you can fold your the oats and any optional ingredients.
  • Bake your muffins for 30-35 minutes or until a toothpick comes out clean. Allow the muffins to cool before serving.

Fill your muffin cups three fourths full. This should give them muffins room for expansion while baking without spilling out onto the pan.
