Not only can about anyone make a cake using this recipe, I like how customizable this cake recipe is to make it even better!

Did you try my Easy Vegan Mug Brownie recipe ?

That chocolatey 60 second dessert recipe is made with no added dairy and tastes amazing. Both this recipe for an olive oil mug cake and that brownie in a mug recipe are delicious vegan dessert ideas that are easy to make and tastes great!

To make this recipe you will need a microwave safe mug. You can find a selection of microwave safe mugs here.

    What is a mug cake?

Sometimes referred to as a "60 second or 2 minute" cake (or similar time increment), a mug cake is simply a cake that is made in a mug. Since the cake is baked in a microwave oven rather than a regular oven, the mug should be 'microwave safe".

Mug cakes are simple and convenient way to make a dessert.

Much of the popularity of these cakes is the short amount of time that it takes to make a tasty dessert in. Mug cakes can be served as is or they can be frosted and served just as any other kind of cake.

Tips for making this mug cake recipe.

Use a microwave safe mug that is large enough to hold your ingredients safely since this a cake and cakes rise when they are baked. I like a 12-16 ounce sized mug for this recipe.

Here are some more great tips for you.

    1. Make this a chocolate cake. Simply swap out up to a tablespoon of flour with unsweetened cocoa powder and toss in a few chocolate chips.
    2. Make this recipe sugar free. You can do this by using a granular sugar alternative that measure like sugar and that can also be baked with.
    3. My cake was made with regular all purpose flour. You can however use another flour, such as whole wheat flour, as long as it measures and bake like regular all purpose flour.

How do you store leftover mug cake?

In the rare case that you do not eat your entire mug cake in one sitting, you can cover the mug with wrap or transfer the the cake to an airtight container and refrigerate it for up to a couple of days. I would not reheat it but, you can bring your leftover cake to room temperature before finishing it.

    • Olive Oil. A similar neutral oil such as vegetable oil can be used instead.
    • Milk. I like unsweetened almond milk since it is friendlier to the Mediterranean diet however, for a more lush cake, oat milk can work. Here is How To Choose The Right Vegan Milk if you are unsure.

How to make Mediterranean Diet Mug Cake

    Prep Time: 3 minutes.
    Bake Time: 2 minutes.
    Servings: 1.

    • Give your mug a quick spray of nonstick or oil.
    • Place the flour, sugar, baking powder, and zest (dry ingredients) into a medium bowl or measuring cup with a spout and use a fork to mix the ingredients together while breaking up any lumps.
    • Next, use your fork to stir in the olive oil and milk until just blended.
    • Transfer the ingredients to your prepared mug.
    • Microwave the ingredients for 90 seconds (a minute and a half). Check the mug cake to see if the cake is set around the edges,as microwaves can cook at different rates. If needed, continue to microwave the mug cake in 30 second increments until your mug cake is done.

Expert Tip👉 Mug cakes will continue to cook after the microwave has stopped as this is the nature of microwave cooking. For this reason it is important to not overcook the mug cake and to also allow the mug cake to fully cool before eating. To remove the cake from the mug, carefully run a butter knife around the edges to loosen when you remove it from the microwave.
