What is vegan shortbread?
Shortbread cookies are a traditional cookie made with butter, sugar, and flour.
Unlike other kinds of cookies, shortbread cookies do not contain any kind of leavening.
Shortbread cookies got their names from being described as "short", which is a reference to their crumbly texture. This crumbly texture is due to the high fat content of the butter which prevents the gluten in the flour from developing.
Traditional shortbread cookies are made with butter.
The butter is an important ingredient as it provides a great flavor and adds to the texture of the cookies.
Vegan shortbread cookies are made with a butter alternative such as coconut oil. While vegan shortbread may not taste exactly like the traditional shortbread, they do offer delicious flavor and similar texture expected from a shortbread cookie.
Tips for making vegan diet shortbread.
My shortbread was made with finely chopped walnuts for texture and for the flavor.
Feel free to use another nut, such as pecans, with or instead of the walnuts.
Here are some more great tips for you.
- Coconut oil was used to make my shortbread. You can alternatively use a vegan butter instead.
- Dark brown sugar is used to sweeten these cookies. Make sure that you are using a vegan dark brown sugar or a vegan dark brown sugar alternative that measures and bakes like regular dark brown sugar.
- This is one of those recipes that is depends on the 'crumbly' texture that is created from minimal mixing of the ingredients. That is, mix the ingredients until just combined to prevent overworking the gluten in the flour.
How to store homemade shortbread.
These shortbread cookies should be stored in an airtight container once they have fully cooled. If properly stored, these cookies should keep for for about a week at room temperature or up to a few weeks when frozen.

Ingredients needed to make Shortbread Cookies with Walnuts
- Flour. This recipe calls for all purpose flour. You can use an alternative flour as long as it measures and bakes like all purpose flour.
- Walnuts. Chop your walnut very fine so that they are small, yet still visible.
- Coconut Oil . Your coconut oil should be soft but, not melted.
- Dark Brown Sugar. Yes you could use another brown sugar however, the darker brown sugar adds the dark color as well as the stronger molasses flavor to these cookies.
- Vanilla Extract. Added for additional flavor.
Expert Tip👉 If you are using raw or unsalted walnuts, you can add a half teaspoon of salt to the flour, using a whisk to blend it it.
How to make Vegan Walnut Shortbread Cookies
Prep Time: 15 minutes.
Bake Time: 20 minutes.
Servings: 30 cookies average sized.
- Place the flour and the chopped walnuts into a medium bowl and use a whisk to combine the ingredients together.
- In a stand mixer fitted with a paddle attachment, beat together the coconut oil and sugar until creamy. Then add the vanilla extract to the bowl.
- Scrape down the sides of the bowl and set your mixer on low. Then add the flour and walnut mixture to the mixer and mix until just combined (the dough should be crumbly).
- Lay out a large piece of plastic wrap on a clean workspace. Transfer the dough on to the wrap, shaping it into a log shape so that it can be wrapped in the plastic. Refrigerate the dough for at least a half hour to up to a couple of days.
- When you are ready to bake your shortbread, preheat your oven to 325 and prepare your baking sheets with parchment paper or a baking mat.
- Unwrap your chilled shortbread log and use a serrated knife or plain floss to slice the dough into cookies that are about a quarter inch thick.
- Place the cookies onto the prepared baking sheets about an inch apart from one another.
- Bake for 18-20 minutes or until the cookies are somewhat firm to touch. While the cookie edges will be baked to golden brown, it may be difficult to see since the cookies are so dark.
- Let the cookies cool on the baking sheets for 10 minutes before transferring them to a cooling rack to fully cool.
