Vegan Walnut Shortbread Cookies

  • Place the flour and the chopped walnuts into a medium bowl and use a whisk to combine the ingredients together.
  • In a stand mixer fitted with a paddle attachment, beat together the coconut oil and sugar until creamy. Then add the vanilla extract to the bowl.
  • Scrape down the sides of the bowl and set your mixer on low. Then add the flour and walnut mixture to the mixer and mix until just combined ).
  • Lay out a large piece of plastic wrap on a clean workspace. Transfer the dough on to the wrap, shaping it into a log shape so that it can be wrapped in the plastic.
  • Refrigerate the dough for at least a half hour to up to a couple of days.
  • When you are ready to bake your shortbread, preheat your oven to 325 and prepare your baking sheets for nonstick.
  • Unwrap your chilled shortbread log and slice the dough into cookies that are about a quarter inch thick. Place the cookies onto the prepared baking sheets about an inch apart from one another.
  • Bake for 18-20 minutes or until the cookies are somewhat firm to touch.
    Let the cookies cool on the baking sheets for 10 minutes before transferring them to a cooling rack to fully cool.
