    Ingredients needed to make homemade tortilla soup.

    • Olive Oil. Used for sautéing ingredients.
    • Onion. Your onion should be diced. A sweet onion was used in making my soup.
    • Red bell Pepper. Also diced.
    • Garlic. Your garlic should be minced or chopped small.
    • Jalapeno. Chopped or minced. You can go as hot or mild as you want to go or even omit it if you are not a fan.
    • Tomatoes. Diced Regular or Fire Roasted tomatoes.
    • Black Beans . Drain and rinse the black beans before adding them to the pot.
    • Vegetable Stock. Homemade or premade and purchased.
    • Seasonings- chili powder, paprika, cumin, and oregano were used to make my soup.
    • Corn. Frozen corn is used to keep it intact when added to the warm soup.
    • Lime Juice. Fresh lime juice is preferred. Lime juice adds a nice flavor balance that is expected from this kind of recipe.

    Expert Tip 👉 There is a difference between vegetable stock and vegetable broth. Vegetable stock is more flavorful and thicker in consistency as it is cooked longer than broth.

    How to make Vegan Tortilla Soup

    Prep Time: 10 minutes
    Cook Time: 30 minutes
    Servings: 6.

    1. Warm the olive oil in a large pot or dutch oven on medium heat. After one minute of heating, add the onion and saute it until soft and turning golden brown (about five minutes),
    2. Stir in the chopped bell pepper, minced garlic, and jalapeno. Cook this for another minute, stirring the ingredients half way through.
    3. Next, mix in the tomatoes, black beans, vegetable stock, and seasonings.
    4. Bring the soup to a boil and then to a simmer. Once the soup begins to simmer, cook it for another ten minutes.
    5. Turn the heat off and carefully use an immersion blender to blend the soup to your desired consistency. If you do not have an immersion blender, running the soup, once it is cool enough to safely work with, through a good blender (in batches) is an alternative way to do this step.
    6. Once you have your desired consistency, add the corn and lime juice and cook the soup on medium for another five minutes or until the corn has cooked.
    7. Serve this soup with your favorite tortilla chips.

    Expert Tip👉 This soup is best when it has a consistency like a chunky salsa.

    How to store tortilla soup.

    Once the soup has fully cooled, you can transfer it to an airtight container. When properly stored, this soup should keep for about four days when refrigerated or up to a few months when frozen.

    Ingredients

    • 1 tbsp Olive Oil
    • ⅓ cup Onion - Diced
    • 1 Red Bell Pepper - Diced

    • 20 oz Tomato - 2 cans fire roasted or diced
    • 15 oz Black Beans - One can drained and rinsed.
    • 2 cup Vegetable Stock

    • 1 cup Corn

    Instructions
