- Pasta or Lasagna Sheets These sheets do not have to be cooked and they tend to better as layers in lasagna because they are larger. Can you use regular lasagna noodles? Sure, if they are precooked.
- Spinach. Your spinach should be precooked and drained.
- Nutritional Yeast. This is used for flavor, to make the tofu ricotta alternative, and as a parmesan cheese alternative. You can alternatively use a vegan parmesan.
- Tofu. Firm tofu is used as a ricotta cheese alternative. You can use vegan ricotta cheese instead.
- Tomato Sauce. You can use your favorite tomato sauce, store bought or homemade, in this recipe.
- Optional Ingredients Include- vegan meat (precooked), vegan mozzarella cheese, and seasonings as desired.
Expert Tip 👉 Cooked fresh spinach was used to make my lasagna. You could use the fresh spinach without cooking it however, your spinach should be cleaned, dried, and chopped and before adding it to this recipe.
Tips for making the best vegan lasagna.
When selecting your ingredients, make sure that everything that you are using is indeed 'vegan' in order to keep this a vegan lasagna. Sometimes the most obvious ingredients are not fully vegan.
- Use your favorite tomato or marinara sauce in your lasagna.
- When adding your lasagna noodles, you can overlap the the noodles a bit to help keep the layers separate.
- If your noodles are overlapping too much or are too large, simply cut them down as needed.
- Feel free to add more 'cheese' as desired.
- For a vegetarian lasagna, you can use dairy cheese for part or all of the cheese ingredients.
- Additional vegetables, such as mushrooms, can also be added to this lasagna. This works best when the veggies have been precooked due to the moisture.
How to make Easiest Vegan Lasagna
Prep Time: 10 minutes. .
Bake Time: 45 minutes. .
Servings : 10, depending on the size of the servings. .
- Preheat your oven to 350 and prepare a (9X13") baking dish for nonstick.
- Your spinach should be already cooked. If is has not been cooked, you can boil cleaned spinach in salted water for three to five minutes or until done. Make sure that the spinach has been drained well before adding it to this recipe.
- To make the tofu 'ricotta', use a good blender or food processor to combine together the tofu and the nutritional yeast, along with desired seasonings, until creamy.
- In a large bowl, combine together the cooked spinach with the tofu ricotta.
- To layer your ingredients in the baking dish, first evenly spread a layer of the tomato sauce on the bottom of the baking dish. Then cover the sauce with a layer of noodles.
- On top of the noodles, first cover the noodles with a layer of the sauce. Then top the sauce with your tofu ricotta.
- Add another layer of noodles over the ricotta and cover that with the remaining sauce.
- Repeat the layers if you have the space and ingredients left to do so.
- Top the sauce with any remaining 'cheese'
- Cover your lasagna with foil and bake the lasagna for 40 minutes. Carefully remove the foil and bake until the lasagna has browned around the edges or is done baking.
- Let the lasagna set to room temperature before serving.
Expert Tip 👉 Avoid adding additional moisture to your lasagna. This can be done by draining ingredients such as the cooked spinach well.
How to store leftover lasagna.
Once the lasagna has fully cooled it should be covered or transferred to an airtight container. If properly stored, this lasagna should keep for about five days when refrigerated or up to a couple of months when frozen.
