Preheat your oven to 350 and prepare a (9X13") baking dish for nonstick.
To make the tofu 'ricotta', use a good blender or food processor to combine together the tofu and the nutritional yeast, along with desired seasonings, until creamy.
In a large bowl, combine together the cooked spinach with the tofu ricotta.
To layer your ingredients in the baking dish, first evenly spread a layer of the tomato sauce on the bottom of the baking dish. Then cover the sauce with a layer of noodles.
On top of the noodles, first cover the noodles with a layer of the sauce. Then top the sauce with your tofu ricotta.
Add another layer of noodles over the ricotta and cover that with the remaining sauce.
Repeat the layers if you have the space and ingredients left to do so. Top the sauce with any remaining 'cheese'
Cover your lasagna with foil and bake the lasagna for 40 minutes. Carefully remove the foil and bake until the lasagna has browned around the edges or is done baking.
Let the lasagna set to room temperature before serving.
