What is Vegetarian Gumbo?
Gumbo is a popular and famous dish with a creole and cajun influence. You can think of gumbo as a stew-like dish that is loaded with flavors (usually meat based) and cajun inspired seasonings .
Vegetarian gumbo is based on the classic gumbo but, without the meat-based ingredients.
Instead of using a roux made with animal fat and flour, this version uses olive oil and flour. Also, instead of the usual beef stock, this recipe uses a vegetable broth.
Tips for making this gumbo dish.
This recipe is made without adding meat, including the usual andouille sausage. You can however, add a vegan sausage to make your gumbo seem more authentic. If you decide to do so, simply cook the 'meat' as directed on the packaging before adding it to the other ingredients.

Ingredients to make this simple gumbo recipe.
- Olive Oil. This is used to sauté other ingredients with.
- Onion. The onion should also be diced for this recipe.
- Bell Pepper. Your bell pepper should be diced.
- Garlic. One to two cloves that should be minced first. I like garlic so I would use two.
- Butter. For vegetarian gumbo, you can use a regular salted butter. Vegan butter can be used for a vegan gumbe. Butter is used instead of animal fat to make the roux.
- Flour. This is the thickening agent used to make the roux. Using too little flour will make your gumbo more like a soup while additional flour will make your gumbo thick.
- Creole Seasoning . This can be a personal choice so use the seasoning that works best for you.
- Worcestershire sauce . Your Worcestershire sauce should be a vegan worcestershire sauce to make a vegan gumbo.
- Hot Sauce. Use the hot sauce of your choice.
- Okra. Frozen okra that has been sliced was used in my gumbo.
- Tomatoes. While some folks (not all) look down on adding tomatoes to gumbo, this recipe needs it as a texture replacement for meat. Use crushed (from a can) tomatoes.
- Broth. Vegetable broth works great in this recipe. Feel free to use a low sodium version if needed.
Expert Tip 👉 You can add protein ingredients as desired to this gumbo. I like vegan meat or maybe beans for example in this recipe.
How to make 10 Minute Instant Pot Gumbo (Vegetarian).
Prep Time: 10 minutes.
Cook Time: 10 minutes.
Servings: 6.
- Start by setting your instant pot to the sautee setting. Once it is hot you can add your olive oil and onions and auté until the onions are translucent (three to five minutes). Then add the bell peppers and the minced garlic and saute for another minute and a half. Carefully transfer the sauteed ingredients to a clean bowl for holding .
- Next, to make the roux, melt the butter with the setting still on saute. Once butter is melted, you can whisk in the flour to build the roux.
- Once your roux is made you can stir in the ingredients that you transferred to the bowl for holding.
- Season the roux by adding your creole seasoning, worcestershire sauce, and hot sauce. Then add the frozen okra, tomatoes, and broth. When you are done adding these ingredients set your instant pot to high pressure for five minutes.
- Once your instant pot is done cooking you can do a quick release by releasing the valve and serve.
- Serve while warm as is, or over a bed of rice! Enjoy!
Expert Tip👉 Roux should be a gravy-like consistency. If the roux is too thick or dough-like you can add a splash of the broth to thin it out. However, if the roux is too thin, simply whisk in more flour a teaspoon at a time.
