Chocolate Covered Frozen Bananas (Vegan)

Ingredients

  • 4 Bananas
  • 8 oz Chocolate - chopped
  • 1 tbsp Coconut Oil - up to 2 tbs as needed
  • Toppings - optional

Topping ingredients are optional and include: chopped nuts, shaved coconut, sea salt, or vegan sprinkles.

Instructions

  • Start by lining a rimmed baking sheet that can fit into your freezer with parchment paper.
  • Slice each banana horizontally in half so that each banana makes two similar sized pieces. Then stick a wooden stick into the center of the open end of the banana halves (about three quarters of the way into each). m
  • Peel each of the banana pieces and then place them on to the prepared baking sheet. Cover the bananas and then freeze them until frozen (about an hour).
  • Before melting the chocolate, have your toppings ready to go as you will need to work quickly coating the melted chocolate with your toppings. Placing the toppings in shallow bowls work best.
  • To melt the chocolate using the double boiler method: In a heat proof bowl over a pot of simmering water, melt the chopped chocolate until mostly melted. Then remove the chocolate from heat and stir until all the chunks have melted.
  • For the microwave method of melting chocolate: make sure that you have chopped your chocolate very fine. Microwave the chocolate until smooth, stopping to stir every 15 seconds.
  • Stir the coconut oil into the chocolate, making adjustments as needed, to smooth out the chocolate. Then transfer the chocolate to a large glass measuring cup or similar item for dipping the bananas. You can alternatively use the bowl that the chocolate is in and a large spoon to help guide the chocolate.
  • Carefully dip each banana into the melted chocolate, gently shake of the excess chocolate, and then sprinkle the toppings over the melted chocolate.
  • Place the coated banana back on to the baking sheet and repeat the process until all of the banana pieces have been coated.
  • Return the bananas to the freezer until the coating has set (about an hour to an hour and a half).
