Dressing:

Salad

  • 6 cups Kale. -- Rinsed and dried with the stems removed before being chopped.
  • 15 oz White Beans. --drained and rinsed.
  • 1 Avocado --Use a firm avocado that has been diced into pieces.
  • ¼ cup Pumpkin Seeds
  • ¼ cup Sunflower Seeds

Instructions

  • Prepare. Prepare your ingredients as indicated. This includes draining and rinsing your beans.
  • Dressing. To make the dressing, place the ingredients into a jar or bowl and use a whisk to combine them together.
  • Kale. Place your kale into a large bowl, such as a large salad bowl. Use your hands to gently massage the kale with your hands until softened (about two to three minutes).
  • Beans. Add the beans to your salad and toss the ingredients to combined.
  • Combine. Pour half of the dressing over the ingredients in the bowl and toss.
  • Avocado. Add the avocado to the bowl along with the seeds. Toss the ingredients again.
  • Serve. Toss the ingredients with the remaining dressing and serve.
