Vegan Mac and Cheese Recipe

Ingredients

Optional- seasonings as desired. Such as salt and pepper.

Instructions

  • Pasta. Cook your pasta according to the directions on the packaging. Then drain the pasta, place it into a large serving bowl, and set it aside to cool while you prepare the sauce.
  • Boil. In a large pot with boiling water on medium high heat, cook your carrot and potato pieces until they are softened (about 15 minutes).
  • Blend. Carefully transfer your cooked vegetables to a food processor or good blender. Give the ingredients a few quick pulses and then add the remaining ingredients ( Olive oil, Soy Milk, Mustard, Paprika, Turmeric, Lemon juice, Nutritional Yeast and optional seasonings). Blend or process until smooth and resembles cheesy macaroni sauce (this can take three to six minutes depending on your desired texture).
  • Combine and Serve. Pour the sauce over your cooked pasta, toss the ingredients, and serve.
