    Jerk Chicken

    • Chicken Breasts Use skinless boneless chicken breasts. You can use clean paper towel to pat any moisture from the chicken.
    • Olive Oil Regular olive oil works best for cooking the chicken.
    • Brown Sugar. Added for a sweet balance enhances caramelization, and adds a bit of depth to the flavor.
    • Smoked Paprika An important spice in this recipe as it adds that 'smokey' flavor.
    • Thyme. Dried thyme.
    • Other Spices Allspice, Garlic Powder, Onion Powder, Ground Cinnamon, Cayenne Pepper, Salt, and Pepper.
    • Lime Juice. Freshly squeezed preferred.

    • Romaine Lettuce. Chopped for easier enjoyment.
    • Mango Diced into bite-sized pieces.
    • Avocado. Use a firmer avocado that has been sliced.
    • Cucumber Diced or sliced small.

    • Prep Time 20 minutes .
    • Cook Time 15 minutes .
    • Servings 4 servings .
    • How to serve : Works perfect when you serve the warm chicken over a cold salad.
    • Notes: You will need large bowls, whisk, and a skillet.

    1. Prepare Prepare your chicken as indicate your chicken as indicated. I like to use a clean paper to pat any moisture off of the chicken so that the coating will stick better. Also, you can trim the chicken to remove any fat etc and even out the breasts so that they are about the same thickness.
    2. Marinate. In a large bowl, use a whisk to combine together the olive oil, brown sugar, paprika, thyme, allspice, garlic powder, onion powder, cinnamon, cayenne, salt, pepper, and lime juice. Then place the chicken into the bowl and toss the ingredients so that the chicken is well coated with the other ingredients.
    3. Cook. Preheat your skillet over medium-high heat for two minutes. Then add the chicken to the skillet and cook for five to six minutes per side until nicely caramelized and fully cooked through. Transfer the cooked chicken to a cutting board to rest for five minutes before slicing it as desired.
    4. Dressing. To make the dressing, in a medium sized bowl, use a clean whisk to combine together the dressing ingredients.
    5. Assemble To assemble the salad, start by arranging the romaine, mango, cucumber, red onion, avocado, and toasted nuts in a large serving bowl (I prefer a more shallow bowl for this). Then you can arrange the chicken over the ingredients in the bowl and drizzle the dressing on top.
    6. Serve. Serve the salad with the chopped cilantro on top and with additional dressing as desired.

    Tips for making the best Caribbean Chicken Salad

    Using fresh chicken breast that you can slice into the pieces that you desire is a simple and easy way to make this recipe. You can make it even easier however, by using chicken strips from the freezer section at your favorite grocery store.

    More helpful tips for you.

    1. While you can marinate your chicken for just a minute or two before cooking, you can marinate it longer for even more flavor. Even as little as 30 minutes of marinating can improves the flavor. An hour to overnight offers a deeper spice penetration and a more authentic jerk profile. I like to place the chicken and marinade in a zip top bag before refrigerating (refrigerate the marinating chicken!).
    2. It is best to add the dressing just before serving this salad. But, you can dress the salad lightly at first and serve extra dressing on the side. This keeps the salad crisp and lets people control acidity and sweetness to taste.
    3. Your chicken is done cooking when it reaches an internal temperature of 165°F (74°C) when a thermometer is into the thickest part of the breast. The marinade should turn the chicken a deep golden-brown color as well. If you allow the chicken to sit for five minutes before slicing the juices will redistribute to result in an even more juicy bite.

    • Can I use chicken thighs instead of breasts?
      Yes. Boneless, skinless thighs work very well and are more forgiving due to higher fat content. You may need to cook the thighs slightly longer until they reach 165°F (74°C).
    • How spicy is this recipe?
      In my opinion, it is moderately spicy. The cayenne controls the heat—use less for mild or increase for more kick. Traditional jerk is quite spicy, but this version is adjustable.
    • Can I grill the chicken instead of using a skillet?
      Absolutely. Grilling adds a more authentic smoky flavor. Cook over medium-high heat for about 5–7 minutes per side, depending on thickness.
    • How long should I marinate the chicken?
      While marinating is not necessary for a great tasting chicken, you can marinate for more flavor.
      Minimum: 15–20 minutes
      Ideal: 1–4 hours covered and refrigerated.
      Maximum: Overnight (covered and refrigerated) for deeper flavor.
    • Can I make this salad ahead of time?
      Yes, you can prepare the components (I would wait for the avocado though) and store components separately. Assemble just before serving to keep everything fresh and crisp.

    • Make this recipe vegan by using grilled tofu, roasted chickpeas, or seasoned cauliflower.
    • Swap out your chicken with shrimp to make a Jerk Shrimp Salad.
