- This recipe calls for coconut milk. Coconut milk is a vegan and paleo 'dairy' ingredient alternative. But, if you are not a follower of these diets, feel free to use whole milk or heavy cream (make this lower in carbs!).
- Yes, this recipe works great when made with an ice cream maker. Yet, if you do not have one, you can freeze this recipe for up to eight hours before serving up. I must add that freezing avocados (preferably in a freezer bowl)for a longer period of time can alter the consistency of the avocados. This ice cream should still be edible however.
- I have also added honey as a sweetener to the ingredient list for this recipe. Alternatives that can also be used include agave, sugar alternative, or sugar.

- Start by blending together the coconut milk and extract in a small mixing bowl.
- Prepare the avocados by removing the skin and the pit. Cutting the avocados in half and scooping out the meat is an easy way to do this.
- Place the avocados in a blender with the extract. Blend until you get a smooth consistency. Alternatively, you can do this by hand by placing the avocado in a bowl and mashing it down. Then blend in the extract.
- Next add the lime and lemon juice to the blender and pulse a few times. Folks not using a blender can simply mash the juices into the avocado mixture.
- Transfer the ice cream to an ice cream maker and process according to the directions of the ice cream maker.
- No ice cream maker? Transfer your ice cream to a freezer safe bowl and cover. Freeze this recipe for up to eight hours before serving up.
