Now we can easily frost those cakes with a Mediterranean diet friendly frosting!
This recipe for frosting can also be made low in fat.
This is something that Mediterranean diet followers especially care about. I like that this recipe allows diet followers to have their cake and eat it too!!! 🙂

Ricotta cheese may be a more healthy cheese than you may think.
I am comparing this to the cream cheese that is normally used in a frosting recipe. Ricotta cheese may be a more healthy alternative to the full fat cream cheese that would normally be used,
Using whole fat ricotta cheese has some benefits when compared to cream cheese.
Ricotta cheese is actually a great source of protein with nearly 30 grams per cup (compared to cream cheese which has 14 grams of protein). When it comes to fat, one cup of cream cheese has nearly 80 grams while ricotta cheese has just under 20 (big difference!).
This recipe also has sugar in it.
The sugar that is added to this recipe obviously sweetens this frosting. However, sugar is also needed to give some structure to this frosting.
To make this recipe you will need powdered sugar.
Sugar of any kind is something that is eaten in moderation when following the Mediterranean diet.
However, using a sugar free powdered sugar that measures 1:1 with the regular powdered sugar, is an option for low sugar followers. You can find a recipe for making your own sugar free powdered sugar here.

I just mentioned that you can make this recipe lower in sugar using a sugar free powdered sugar. I also mentioned that using a lower in fat ricotta cheese can cut down the fat content, although this could affect the structure of your frosting.
Here are some more great tips for you.
- Change up the flavor of your frosting by using flavored extracts. For example, try a strawberry, banana, or maple flavored extract in your frosting instead of the vanilla extract.
- You can make the texture of your frosting more interesting by adding chopped nuts or shredded or flaked coconut to it. Or you could just top the frosting with these ingredients. A citrus zest is especially nice for a Mediterranean style dessert!
- Whipping this frosting will help make it big and beautiful. If you are looking for something with more fat for structure, consider adding a bit of low fat cream cheese, in moderation of course. There are some lower in fat butter alternatives that are worth trying as well.
Try this lower in fat frosting recipe using maple syrup
I have not tried this but, I think it is work checking out. Instead of using the powdered sugar, try adding a couple of tablespoons of maple syrup. Honey may also work in this recipe.

This recipe also calls for whipping cream.
Whipping cream helps the frosting be light and easier to spread. An alternative that you can try using is Greek Yogurt.
Here is how to prevent crumbling your cake when you frost it.
- Allowing your cake to fully cool is essential. Optimally, your cake should be at room temperature before frosting it.
- Placing your cake on a piece of Parchment Paper and/or a frosting stand is extremely helpful as well.
- Using a light hand on your spatula will help you spread your frosting more evenly. Be careful to avoid touching the cake with your spatula in order to avoid scraping your cake.

- Vanilla Extract- 2 teaspoons.
- Whipping Cream or Greek Yogurt (plain)- 1- 1 ½ cups, depending on consistency desired.
- Optional- cream cheese- 2 tablespoons for structure or as needed.
How to Make Ricotta Frosting
- Place a large mixing bowl in the refrigerator for at least 15 minutes before starting.
- In a mixing bowl beat together the ricotta cheese and powdered sugar. Add any optional cream cheese at this time as well. Beat this for at least five minutes to allow it to get fluffy. Then stir in the vanilla extract.
- Remove the bowl from the bowl from the refrigerator. In the refrigerated bowl, whip the whipping cream until fluffy. Then fold it into the contents from the first bowl.
- If you are adding additional ingredients, such as chopped nuts, add it to the second mixing bowl with the ricotta cheese.
