This reminds me a lot of the 6 Ingredient Granola recipe that I posted recently.
What I like about these recipes is that they are so delicious and so filling too!

This flaxseed recipe for pancakes is a great way to enjoy pancakes when you are following the Mediterranean diet.

I should also mentioned that this recipe is also friendly to other diets such as low carb diets. There will be ingredient substitutions in this recipe for anyone looking for some.

You may be asking if you can put flaxseeds in pancakes.

The answer is yes!
This pancake recipe is proof that yes, you can put flaxseeds into pancakes. To be honest, I have been experimenting with adding flaxseeds to about everything including my bread maker recipes (coming soon…).

There are several ways to use flaxseed in your pancakes that I will share.

My focus will be on making this a Mediterranean diet friendly recipe for pancakes.
We will be using whole wheat flour to make this recipe.

To make this recipe you will need flaxseed meal.

You can make your own flaxseed meal by grinding flaxseeds in a food processor or a good blender such as a Vitamix. One cup of flaxseed should make around 1 ⅓ cups of meal.

There are several ways that you can personalize this recipe.

My favorite way to personalize this is with the extracts that can be added. While this recipe calls for Vanilla Extract, you could use an almond extract , maple extract, or extract of your choice.

Here are some tips for making Yummy Flaxseed Pancakes

Here are some more great tips for you.

  1. Adding cornstarch to the whole wheat flour will make the pancakes easier to chew. Alternatively, you can use 3 cups of whole wheat pastry flour instead of the whole wheat flour + cornstarch.
  2. Make this recipe vegan by using a vegan egg replacer for the egg, a nut milk for the milk, and maple syrup for the sugar.
  3. You can make this recipe gluten free by using a gluten free flour in place of the whole wheat flour.
  4. Do not over mix the ingredients when they are combined together in the same bowl. Over mixing the ingredients will make them softer and easier to enjoy.

It is not very hard to make the best pancakes ever.

I just shared some great ideas for how to make this specific recipe even better. Now I will share some great tips on how to make any pancaked even better.

How to make the best pancakes.
I mentioned above to avoid over mixing your batter. Having a few chunks in your batter is not a bad thing as chunks seem to cook their way out of the pancake

  • The instructions for this recipe mention refrigerating the batter while heating up the skillet or griddle. Allowing pancake batter to rest while things heat up will allow the ingredients to work together better (especially when there is gluten involved).
  • Overheating your skillet or griddle can result in burning the outside of your pancake or under-cooking the inside of it. Opt for a medium heat for cooking your pancakes instead.
  • Fresh ingredients make a huge difference. Using expired ingredients, especially anything that leavens, can lead to a less than perfect result, in whatever you are cooking or baking.

Preparing your griddle is just as important to the success of this pancake recipe as the ingredients that you put into it.

I suggest giving your griddle a light spray of nonstick and then preheating it on medium heat. Also, your pancake will be ready to flip when you start seeing the the little bubbles form on top of the cooking pancake.

I mentioned earlier that you will need flaxseed meal. to make this recipe.

You can make your own flaxseed meal by grinding flaxseeds in a food processor or a good blender such as a Vitamix. One cup of flaxseed should make around 1 ⅓ cups of meal.

I also mentioned that we will be using whole wheat flour to make this recipe.

Make this recipe vegan by using a vegan egg replacer for the egg, a nut milk for the milk, and maple syrup for the sugar.

You can make this recipe gluten free by using a gluten free flour in place of the whole wheat flour.

The ingredients needed to make these Yummy Flaxseed Pancakes

Make this ‘keto/low carb friendly’ by using a keto/low carb friendly flour. Please check the packaging to assure whether or not you will need a binder such as an additional egg.

Here are the needed ingredients for this recipe.

  • Whole Wheat Flour – 1 ⅓ cup.
  • Cornstarch– 3 tablespoons.
  • Ground Cinnamon
  • Baking Powder– 2 tsp
  • Flaxseed Meal– ⅓ cup
  • Granulated Sugar– 1 tablespoon.
    You can use a Sugar Alternative or maple syrup
  • Egg-1. Feel free to use an vegan egg replacer for the egg,
  • Vanilla Extract– 2 teaspoons.
  • Milk- 1 ½ cups. You can use anut milk for the milk,
  • Optional- Vegan Chocolate Chips– ½ cup.

Here is how to make these Yummy Flaxseed Pancakes.

  • In a medium mixing bowl, use a whisk or a fork to mix together the whole wheat flour and the cornstarch. Then add in the ground cinnamon, baking powder and flaxseed meal. Attempt to break up any clumps in the ingredients at this point as well.
  • Next, in a large mixing bowl, beat together the sugar and the egg.
  • For the next step, we will add the ingredients from the first bowl to the second bowl. Do this by adding half of the ingredients at a time, mixing gently between additions. Then add the vanilla extract and the milk. Mix this until just blended as it is important to to not overmix the batter. If you are adding chocolate chips gently fold them in using a rubber spatula.
  • Set the batter aside (I often place my batter in the refrigerator if I will be taking longer than twenty minutes to make my pancakes).
  • Gently spray your skillet or griddle with nonstick (or use the method of your choice). Preheat the skillet on medium heat.
  • Cook your pancakes on medium heat. When you see bubbles forming on the top it is probably time to flip your pancakes and finish cooking until they begin to brown and the insides have been cooked.

Ingredients
