Since adopting a Mediterranean diet lifestyle, I must say that I have become a bit more conscious about what I eat.
Eating less animal product is just one way way that I have done this. However, I would not necessarily call myself vegan at the moment.
For anyone asking what you can eat as a vegan, it is really pretty easy.
It is really about what you cannot eat. As a vegan, you cannot eat any animal products. Vegetarians tend to eat animal products that do not result in the death of any animal (eggs, milk, etc).
Vegan and vegetarian dieters eat plenty of plant based foods.
I am referring to vegetables, legumes, and nuts. These eaters have a lot in common with Mediterranean diet followers if you consider this.
The Mediterranean diet focuses a lot on what is not allowed on the Mediterranean diet.
This diet is not as strict as the vegan and vegetarian diet. As a result, the Mediterranean diet tends to focus on moderation more than what is and is not allowed.
Like the vegan and vegetarian diets, the Mediterranean diet emphasizes eating vegetables, whole grains and legumes.
What is consumed in moderation is red meat, refined sugar, white flour and non-plant based fats and oils. You can see that there is a lot in common with the two diets.

- All purpose wheat flour- a more Mediterranean diet friendly choice. I would however suggest adjusting the moisture of your brownie as needed with this choice.
- Also, all purpose organic flour- read the label for this choice as it can be white flour, unbleached flour, or another kind of flour.
- All purpose gluten free flour- I have not tried this however, it is worth mentioning.
- All purpose, keto low carb flour- again, these flours are worth mentioning for those who are interested.

- Water- 1 cup. Can sub in coffee to amp up your brownies!
- Applesauce- 1 cup unsweetened. Can use vegan applesauce or you can find a recipe for sugar free applesauce here.
- Oil- ¼ cup . Suitable oil choices include sunflower, canola, peanut, avocado oil, or olive oil.
- Vanilla Extract- 1 teaspoon
- Chocolate Chips- 1 cup.

How to make Vegan and Mediterranean Diet Brownies
- Preheat your oven to 350 and prep an baking dish (9 X 13 works well) for nonstick.
- In a medium mixing bowl whisk together the flour, baking powder, and salt.
- Next, in another medium mixing bowl, whisk or use a fork to mix together the sugar (or alternative) and the unsweetened cocoa.
- Now, in a large mixing bowl, mix together the water, applesauce and oil. Then add to the large mixing bowl the flour mixture from the first bowl, stirring gently and then adding the cocoa and sugar mixture from the second bowl. Add the vanilla extract and mix until blended.
- For adding the chocolate chips, there are two options . You can fold them into the batter or add half of the batter to the prepped baking dish, add the chocolate chips, and then add the remaining batter to the baking dish. The first option will evenly distribute the chips and the second will distribute the chips to the center of the brownies.
- Bake for 26-30 minutes and allow to cool a bit before serving. A toothpick test will most likely not work in this recipe as the chocolate chips may thus give a false negative.
