Vegan Gluten Free Chickpea Cookies
If you liked my recent recipe for vegan chocoalte chip cookies.
Not only are these cookies vegan, but they are also gluten-free and pretty yummy too. Who would have guessed?? 🙂
Most importantly, these delicious chickpea cookies are Mediterranean Diet-friendly.
Yep, just because we are following a healthy diet, such as the Mediterranean diet, we do not have to be deprived of the yummy foods in life such as cookies. This also goes for vegan and gluten free folks by the way
To make this recipe, you will need chickpea flour.
Chickpea flour is a high protein and fiber alternative to all purpose flour. Like other gluten free flours (thin almond flour for example) chickpea flour is made from ground up chickpeas.
Surprisingly, chickpea flour is actually a good binder.
In many gluten free recipes, you will need to add some kind of a binder to make up for the lack of gluten. However, chickpea flour is a thick flour that itself can be used as a binder (great for gravies and soups!).

Certainly, you do not need to make your cookies into sandwich cookies. These cookies are good either way,
Here is how to make this simple tahini filling for these cookies.
You will need to use tahini paste (½ cup) , honey (1-2 tablespoons) and vegan cream cheese alternative (¼-1/3 cup). Blend these together until you get your desired creamy consistency.
Tips Vegan Gluten Free Chickpea Cookies
I just mentioned that you can make a great tasting filling in order to make these cookies into a cookie sandwich.
Also, chickpea flour is a thicker flour than all purpose flour which means that the texture of your batter and cookies will be a bit different than you may be used to.
Here are some more great tips for you.
- Normally, this recipe calls for butter. Using a vegan fat replacement for the usual butter is essential if you are on a vegan diet. You can find vegan butter alternatives here. Please note that you may need to adjust the amount that you use as they often melt faster than real butter and can cause your cookies to turn out flat.
- Mediterranean diet followers need to stick to plant based fats in baking. Options for butter alternatives that could work in this recipe include nut butters, olive oil (use less than you would butter), mashed bananas (1:1), or unsweetened apple sauce (replace only half of the fat 1:1 with applesauce).
- Also, you can make this sugar free by using a granular sugar alternative or brown sugar alternative that measures 1:1 with sugar.
- It is essential that you flatten your cookies just before you pur them into the oven in order to keep them from becoming cake-like. This is a common thing when it comes to baking with chickpea flour.
Some folks wonder if chickpeas are good for you.
There really are a lot of health benefits associated with chickpeas. This legume family member is virtually fat free and is a great source of protein (hence they are a favorite for vegetarians and vegans).
However, it could also be the fiber in chickpeas that make them so popular.
Vegans are well aware of the importance of fiber in the diet, as are others (including diabetics). I am always so amazed at how fast I fill up when I am eating anything that has chickpeas in it.
