Amazing Tofu Miso Soup
This really is the easiest way to make a version of a traditional Japanese soup.
You will like the small ingredient list and the flavor those ingredients make when they come together.
I recently posted a recipe for Easy Vegan Tofu and Broccoli Stir Fry.
That stir fry recipe reminds me of this one as they both are recipes that anyone can make and are also Asian influenced.
Also, both recipes feature tofu as a needed ingredient.

My first question was to ask what miso made of.
Miso soup is based upon the flavor of miso paste.
Miso paste is made from fermented soybeans.
If you were to ask what does miso paste taste like, I would first say that it is salty.
Thankfully, if you are concerned about salt consumption, it does not take a lot of Miso to get that flavor going into this soup.
There are some probiotic benefits that have been associated with miso.
There are some reported health benefits associated with miso soup.
I should start by mentioning that as a delicious soup, miso soup is relatively low in calories. It is also pretty filling as tasty.
Researchers suggest that it is okay to drink miso soup every day for health benefits.
For starters, miso has protein, fiber, as well as many vitamins in it. Even better, experts tell us that miso contains probiotics and anti-inflammatory properties that may be especially beneficial for fighting breast cancer (isoflavones can lower the risk of breast cancer).
Tips for making an Amazing Tofu Miso Soup

Here are some more great tips for you.
- Like most other versions of miso soup, this recipe calls for dashi granules. Dashi granules do contain fish flakes. You can find vegan dashi here.
- Miso paste is not added to the hot soup as heating it can affect some of the health benefits associated with it. Instead, we will simply stir in the miso paste at the end.
- This recipe calls for silken tofu which can be firm or soft. To prepare your tofu, drain it and then cut it into ½" cubes.
The soup base used in this Miso soup recipe is known as Dashi.
Traditional dashi is made from kelp seaweed, bonito fish flakes, dried sardines, and mushrooms.
Obviously, you could make your own dashi but, really, who has the time and the ingredients on hand? Not me.

Using prepared dashi will certainly make this recipe easier and quicker to make. It also solves the problem of finding the ingredients needed to make it yourself.
Some folks prefer miso soup with a bit of seaweed added to it.
If you are missing the seaweed factor in your miso soup, feel free to add some.
However, if you are like me and do not live by any source of seaweed, you can try using kale, spinach, or even prepackaged dried seaweed.

- Miso Paste- ¼ cup .

- Green Onions- ¼ cup diced. That is about two to three average sized green onions.
- Optional- ½ cup of kale, spinach, wakame, or even prepackaged dried seaweed.
Here is how to make an Amazing Tofu Miso Soup
- In a medium saucepan (3-4 quart) on medium to high heat, bring the dashi and the water to a boil and then reduce it to a simmer.
- Use a ladle to remove about a half cup of the broth and transfer it to a small bowl or a glass measuring cup. Use a whisk or a fork to blend in the miso paste.
- Next, turn the heat down to low. Add the contents from the cup or bowl from the last step as well a the tofu and any optional ingredients. Allow this to sit for 2-3 minutes and then serve with the diced green onions.
