This recipe is especially for anyone who cannot consume dairy. This recipe is also for anyone who chooses to use a milk alternative.

This almond milk can be used in many of my other recipe such as this recipe for Lemon Chi Muffins.

You could choose to simply dring almond milk just as you would drink most any other beverages including milk.
I like to use almond milk in many of my recipes since it is a plant-based choice that also has a decent shelf life.

About now you may be wondering how do they make almond milk anyway?

I mean, almonds are not mammals, right?
If you think that being a mammal is the prerequisite for making milk, you may be surprised by this recipe for almond milk.

This recipe for almond milk really proves that milk does not have to be a ‘dairy’ product.

Yes, you will find premade almond milk in the dairy section of your local grocery store as I know that I do.
But, almond milk is not technically considered to be dairy, as there are no animals involved in making it, and is thus vegan.

For skeptics out there who are basing making their own and are asking is it cheaper to make your own almond milk, check this out.

I urge you to read the ingredient label on the store-bought almond milk. Doing so may convince you that knowing exactly what goes into your homemade almond milk may make it worth your while to make it.

Homemade milk like this will keep in the refrigerator for up to five days.

However, you can easily freeze your almond milk to make it last even longer. This makes making almond milk in bulk an even better idea for some folks.

Tips for Making Great Tasting and Homemade Almond Milk

I just mentioned that storing almond milk in an airtight beverage container in the refrigerator will help it keep for up to five days. However, freezing almond milk can help it last even longer.

Here are some more great tips for you.

  1. Soaking almonds is an essential part of this recipe. For creamy almond milk, allow your almonds to soak for a couple of days rather than overnight.
  2. Pasteurizing can help prolong the shelf life of almond milk. To pasteurize your almond milk you can heat it on the stove or in the microwave. I have never done this but, I know that there is a high temperature involve and a bit of stirring. Please research this if you plan on doing it. Perhaps a better way to prolong the almond milk is to simply freeze it.
  3. A byproduct of making your own almond milk is what is called ‘almond meal’. There are actually some uses for the almond meal as a flour substitute in baking. Even better, the almond meal can be frozen for later use!

Here is how to soak the almonds in order to make almond milk.

Soaking the almonds is done to facilitate the removal of the skins and soften the nut so that the almonds can be ground up to make the milk and meal.
There are also digestive benefits for soaking almonds that are not necessarily related to this recipe.

To soak the almonds you will need a large bowl and enough warm water to cover the nuts.

Simply place the almonds in the bowl and cover them with warm water overnight or up to two days at room temperature with a towel or cover over the bowl. Then drain and rinse the almonds in cold water before allowing them to dry out on a clean towel or paper towel for about twenty minutes.

Here is how to give your almond milk a bit of flavor.

Add a teaspoon or two of vanilla extract or another flavored extract to the blender when you go to blend your milk.
Or, you can add a teaspoon or two of unsweetened cocoa powder to make yourself some chocolate-flavored almond milk.
