Baked Carrot Fritters

An easy recipe for carrots that most everyone can agree upon. 

I like how this recipe is baked and so easy to make as well. If you have tried my recipe for Honey Roasted Carrots, then you know that I am a fan of carrots in general. Both recipes feature great-tasting ways to serve carrots. However, this recipe features other important ingredients besides carrots to make it so good.

I always wondered what are fritters made of.

When we think of fritters we think of dough that has been mixed with something else and then fried. To me, the nutritional value of dough that is fried, with about anything added to it, is probably not as healthy as I would like it to be,

Luckily, we can alter the usual fritter recipe to make it more diet-friendly,

Specifically, the Mediterranean diet friendly. Adding carrots to the ‘dough’ and baking our fritters are a good way to make this a more healthy recipe.  

Some people confuse fritters with doughnuts.

The two are alike in that both recipes require the deep frying of dough. But, while the fritter is flat, the doughnut is usually circular with a hole in the middle.

Here is how to keep your fritters crispy.

Baking the fritters is one way that we will make these fritters crisp. Just as important, however, is to allow your just grated carrots to sit on a few paper towels in order to soak up some of their juice.

Tips Baked Carrot Fritters

I just touched on allowing grated carrots to sit on a few paper towels before adding them to this recipe. This will help drain some of the extra liquid from them which can result in a more crispy fritter.  

Here are some more great fritter making tips for you.

  1. You do not have to use just carrots in this recipe. Consider substituting grated zucchini for some of the carrots.
  2. I have not tried this but, I like the idea of using an air fryer to make this recipe. Depending on the kind of air fryer that you have, you may need to bake your fritters in batches. I would bake for five minutes at 380 for five minutes and flip them over to bake until they begin to brown.
  3. Your baked carrot fritters can be frozen to enjoy later. Simply allow them to cool and then wrap them well in plastic wrap or in an air tight container. When you are ready to heat the fritters up, allow them to defrost and bake them.

Here is how to serve fritters.

  Obviously, you can allow your fritters to cool a bit and serve them alone. You may want to offer a side of apple sauce or yogurt to serve them with.  

This recipe can be made low carb of gluten free.

  Make this recipe gluten free by using gluten free flour instead of regular flour. Or, you can make this recipe low carb by using low carb Carbalose flour. Make this ‘keto friendly’ by using a keto friendly flour. Please check the packaging to assure whether or not you will need a binder such as an additional egg.  

Yes, you can easily ‘fry’ your baked carrot fritters instead of baking them.

This method is not to be confused with ‘deep frying’ though. To fry these fritters simply lightly coat a skillet with a bit of olive oil and allow it to warm. Cook these fritters on medium to medium-high heat until the bottoms start to turn brown. Flip the fritters and allow them to cook until done.

  Make this recipe gluten free by using gluten free flour instead of regular flour. Or, you can make this recipe low carb by using low carb Carbalose flour. Make this ‘keto friendly’ by using a keto friendly flour. Please check the packaging to assure whether or not you will need a binder such as an additional egg.

  • Carrots- 1 ½ cups of grated or shredded carrots. That is about 4 to 4 ½ average sized carrots.
  • Flour- 1 cup all purpose or whole wheat flour or a mix of the two. Make this recipe gluten free by using gluten free flour instead of regular flour. Or, you can make this recipe low carb by using low carb Carbalose flour. Make this ‘keto friendly’ by using a keto friendly flour. Please check the packaging to assure whether or not you will need a binder such as an additional egg.
  • Baking Powder– 1 teaspoon
  • Seasonings such as Salt and/or Pepper
  • Eggs- 2
  • Optional- milk, almond milk, or water as needed if batter seems to be too thick.
 

How to make baked carrot fritters.

 
  • Start by grating or or shredding the carrots. Place the carrots on a few paper towels or clean kitchen towel to allow them to drain. You can also place them in a colander to help squeeze the liquid out.
  • Preheat your oven to 375. Line a baking sheet with parchment paper or prepare the baking sheet for nonstick.
  • In a mixing bowl , use a whisk or a fork to mix together the flour, baking powder, and seasonings.
  • Add the carrots to the bowl and the eggs. Blend the ingredients together until just mixed. If the batter seems to thick, add a bit of milk or water until you reach a consistency where you will be able to form the fritter patties.
  • Use a large spoon or scoop to scoop fritter batter out of the bowl and form it into a patty. Continue to do this until all of the batter has been made into patties.
  • Bake your fritters for 15 minutes then flip the fritters over and continue to bake until the brown and are done. This should be about 15 to 20 more minutes. Allow the fritters to cool a bit on the baking sheet before serving.
