- Flour. Regular all purpose flour was used to make my pasta.
- Eggs Use large eggs.
- Olive Oil. Adds flavor and moisture to the pasta.
- Water. Room temperature.
- Salt. Regular table salt.

- Prep Time: 20 active minutes .

- Notes: You will need a mixing bowl, dough hook (if using a mixer), plastic wrap, pizza cutter, and pasta cutter wheel .
- Flour. In a large mixing bowl, use a whisk to combine together the flour and salt. Then create a well in the center of the mixture.
- Wet ingredients In the well that you just created in the center of the flour, add the eggs, olive oil, and water.
- Knead. Knead the ingredients in the bowl until the dough becomes elastic and not sticky. This should take about 10 minutes on medium low speed or a bit longer by hand.
- Rest. Cover the dough with plastic wrap and allow it to rest for 30 minutes.
- Dough. Divide the dough in half and then divide each half in half. On a lightly floured clean surface, roll out the first portion of dough to no thicker than about 1/16th" (it needs to be as thin as possible without being see through).
- Cut Use a pasta cutter wheel to cut the pasta into two inch wind strips. Then use the pizza cutter to cut each strip to about an inch and a half tall (each strip will be 2" wide and ½ " tall).
- Shape. To form the bow tie, pinch the pasta in the center from top to bottom (straight edges). Then shape the pasta into an accordion and pinch the center together. You can wet your hands with water if the dough becomes sticky.
- Cook. Cook the pasta for 5-7 minutes in boiling salt water or until done (cooking time can differ depending on the size of the pasta).

Tips for making the best homemade pasta.
Regular all purpose was used to make my pasta. Semolina flour or a blend of the two flours can alternatively be used.
More helpful tips for you.
- Kneading the dough is an important part of the process. This is what makes the dough smooth and elastic so that you can work with it. Your dough is ready to work with when the kneaded dough can spring back.
- Allowing the kneaded dough to rest allows the gluten to relax which makes it easier for your to roll it out.
- While you could cook your pasta just after making it, if you let it dry for a half hour first it will allow the pasta to keep its shape better when cooked.

How to store homemade pasta.
If you will not be cooking your pasta just after making it you can place it in an airtight container and store it for up to two days in your refrigerator or frozen for up to a few months. I would let it dry out a bit before storing it.
