    What you should know is that making this apple cake may be more simple than you may have expected it to be.
    This is because the apple provides flavor and texture that makes the cake so interesting and delicious.

    This cake recipe has also been adjusted to make it more friendly to the Mediterranean diet.

    Good choices for baking apples that would work in this recipe include Fuji, Gala, Honey Gold, Jonathan, and Granny Smith (can be cooked or baked). I sometimes like to use two different kinds of apples to make the flavor of the cake even more interesting.

    Ingredients needed to make Mediterranean Diet Apple and Walnut Cake

    • Apples- 4 cups peeled, cored, and chopped. That is about three to four apples depending on the variety that you are using.
    • All Purpose Flour- 2 cups. Make this recipe gluten free by using an all purpose gluten free flour. You can make this recipe lower in carbs by using a granular sugar alternative and low carb all purpose flour. Mediterranean diet followers can sub in a white whole wheat flour for half of the all purpose flour.
    • Baking Soda- 2 teaspoons.
    • Ground Cinnamon- 1 ½ teaspoons.
    • Ground Nutmeg- ½ teaspoon.
    • Sugar- 1 ½ cups. Sugar alternatives are okay to use however, I suggest using a granular sugar alternative that measures 1:1 with sugar to keep the balance of ingredients.
    • Canola Oil- 1 ½ cups.
    • Eggs- 2. Feel free to use an egg replacer or one cup of mashed bananas.
    • Vanilla Extract- 1 teaspoon.
    • Chopped Walnuts- 1 cup.

    How to make Mediterranean Diet Apple and Walnut Cake

    • Prepare the apples by removing the skin and the core and slicing into chunks.
    • Preheat the oven to 350 and prep a baking pan for nonstick. Lining with parchment paper works well.
    • Use a whisk or sifter to sift together the flour, baking soda, ground cinnamon and ground nutmeg. Set this bowl aside.
    • Next, in a mixing bowl, beat together the sugar and the oil.
    • Add the flour mixture from the first bowl along with the eggs and vanilla extract to the second bowl with the sugar mixture. Mix until just blended. Then fold in the chopped walnutes.
    • Bake for 45 to 50 minutes or until a toothpick comes out clean. Allow the cake to cool on a rack.
