This recipe for a Mediterranean Diet Friendly Chocolate Cake is possibly one of the few that I have ever seen.
I like that it tastes just as good as the regular chocolate cakes that I have tried that are made like this one.
Mediterranean Diet Friendly Chocolate Cake
If you have seen my recipe for a Mediterranean Diet Friendly Cake then your probably know by now that it is possible to bake a cake that is friendly to the diet.
By making a few modifications in a recipe, we can make it more friendly to this popular trend in eating.
The experts seem to tell us that the elimination of certain ingredients can make something more friendly to the diet. We can easily follow this by substituting in different ingredients that taste and behave like the original.
The Mediterranean Diet is more about the moderation of eating certain foods rather than the elimination of a lot of foods.
What I mean is that there are certainly certain foods that you should avoid if possible. However, many of these foods can be enjoyed in moderation.
This recipe encompasses both friendly ingredients and moderated ingredients.

There are some ingredients for the cake that you will need to make this Mediterranean style cake.
Unsweetened cocoa powder can easily be found online. Please make sure that you are not using a sweetened product or a chocolate milk beverage product.
I am using All Purpose Flour in this recipe.
There are more Mediterranean Diet friendly flours that you can alternatively use such as Whole Wheat Flour or many Semolina Flour products . Please check the packaging to assure that the flour that you choose to use measures 1:1 with all purpose flour. Also, using a flour other than all purpose flour can, and most likely will, affect the texture of your cake.
Here are some tips for making this chocolate cake.
- Using a Springform style pan will make this cake easier to cut and serve when it is done baking.
- Making this cake using a sugar alternative to sweeten it is possible. However, please use a granular sugar alternative that measures 1:1 with sugar. This will help keep your dry to wet ingredient ration intact. Also, bake your cake the cake at 325 for 35 to 40 minutes. Read the label on the product that you choose to make sure that it is suitable to use in a recipe such as this one.
- My favorite tip, of course, is to freeze individual pieces of cake away for later enjoyment. That also keeps my snacking at bay. 🙂

As you probably already know, most frosting, thanks to the bad=fat ingredients in them, are about the worst thing that you can eat when you are trying to take care of your heart and body. I classify anything that I cannot pronounce as bad for my body.
However, there are some toppings that you can put on top of a Mediterranean Diet friendly cake such as this one.

- The obvious, fresh fruit such as berries.
- Peanut butter without sugar in it (includes many organic varieties).
- I have not tried this but, I have heard that if you mix 2 parts Unsweetened cocoa powder with 2 parts Maple Syrup with one part coconut oil and two mashed avocados, you can make friendly frosting. I will need to test this further.
- Lastly, Jam (jelly is too chunky), although I am not sure which flavors I would choose to go along with chocolate. Maybe strawberry??
I should also mention that this is a vegan recipe.
There are no eggs and no dairy products added to this cake recipe. It is actually a pretty simple recipe for a chocolate cake.

- Sugar- ¾ cup.
- Olive Oil - ⅓ cup. Can use other Mediterranean diet friendly oil such as canola oil, flaxseed oil, or sunflower oil.
- Vanilla Extract- 1 teaspoon.
- White Vinegar- 1 tablespoon.
- Water- 1 cup, cold.
Mediterranean Diet Friendly Chocolate Cake
- Preheat your oven to 350 and prep a cake pan well for nonstick.
- In a mixing bowl , sift or whisk together the flour and baking soda.
- Next in another mixing bowl, whisk together the unsweetened cocoa powder and sugar.
- Gently (do not blend in) stir the oil into the first mixing bowl with the flour.
- Now, in the second bowl, gently stir in the vanilla extract and the vinegar.
- Transfer the contents of both bowls to a large mixing bowl. Add the water and beat the ingredients together.
- Bake your cake for 30-35 minutes or until a toothpick comes out clean. Allow to cool before serving.
