I am not sure that I know of anyone who would not want a chocolate chip cookie.
Especially a good looking cookie that also tastes good.
I think that is because not every chocolate cookie tastes the same.
You could certainly settle for a chocolate chip cookie that comes out of the box from the grocery store.
However, I would think that most of us would prefer a cookie that is homemade made with ingredients that we are all
familiar with.
To be honest, I was kind of surprised that there is any kind of a cookie that would be friendly to the Mediterranean diet.
This is because we all know that refined sugar is something that we should avoid. But, having said that, you could certainly make these cookies without the refined sugar.
You really can make these chocolate chip cookies without adding refined sugar.
My suggestion in doing so would be to use a natural sweetener such as stevia. Please read the label on your sweetener to get an idea how much to use, or measuring equivalence when compared to sugar (use a granular alternative for best results.)
We also know that chocolate chips have sugar added to them in most cases.
However, you could also use an alternatively sweetened chocolate chip instead.

Brown sugar is also added to this chocolate chip cookie recipe.
However, you could use a brown sugar alternative instead. Another option would be to simply substitute your white sugar alternative for the brown sugar too (it won't look or taste the same yet, it could suffice).
Substituting oil for butter in a cookie recipe can alter the cookie.
First of all, we are adding a liquid to the recipe where there was really no liquid. So, as a result, we will add less oil than we would have butter to compensate for this imbalance.
Olive oil also brings its own taste to this recipe.
We all know that the taste of olive oil can range from kinda bland to bold and fruity.

- Eggs-2.
- Vanilla Extract- 1 ½ teaspoons.

How to make Chocolate Chip Cookies Made With Olive Oil.
- Preheat your oven to 350. Prep your cookie sheet for nonstick. I use parchment paper.
- In a medium bowl, whisk together the flour and baking soda.
- Next, in a mixing bowl, mix together the olive oil and the sugar. This will result in a thinner, yet still kind of cream like, consistency unlike a regular butter and sugar batter which is creamy. Next add the eggs, one egg at a time, stirring between additions.
- Add the dry ingredients, ½ at a time, to the mixing bowl, stirring gently between additions. On the second addition, also add the vanilla extract.
- Fold in the chocolate chips by hand.
- Bake these cookies for 10-12 minutes or until they begin to brown. Please note that this will be somewhat softer in the middle than regular chocolate chip cookies. However, this seems to please people, such as myself 🙂 .
