Easy Spanakopita Dip
I must admit that I love the taste of Spanakopita. This could be because I love the taste of the spinach and cheese when they work together under a flaky, Filo or phyllo crust.
When I first tried a low carbohydrate diet I had to give up my Spanakopita.
While it was not because of the of the yummy spinach and dairy filling, Spanakopita still had to be avoided.
This is because of the yummy and flaky phyllo crust that encapsulates that delicious spinach filling.
While on the low carbohydrate diet I missed that great tasting Spanakopita appetizer.
It seems like every time there is a special diet, something tasty has to go. In my case it was spanakopita.
The truth is that Spanakopita is so readily available and thus, easy to serve up for a snack or a crowd.
Also, everyone seems to enjoy eating Spanakopita at parties because it fits neatly in your hands, can be easily dipped into something else, and tastes good. So, as a result, I just started picking off the crust and enjoying my Spanakopita filling without the crust as sort of a low carb compromise.
I remember the day that it dawned on me that there is a way to Spanakopita without the carbohydrate filled crust.
It was while I was making a simple spinach dip that it dawned on me how similar the two really are. I mean, both Spanakopita and spinach dip both feature spinach that is combined with dairy, such as sour cream.
In the case of a Spanakopita dip, there are a few more ingredients than spinach dip has.
Besides the seasoning, Spanakopita filling or dip also features cheese. Being a Greek based recipe, of course that cheese is going to be Feta cheese.
By the way, feel free to serve your Spanakopita dip up with some form of phyllo as well.

This recipe call for for sour cream to be used as a dairy to mix with the spinach. However, being a fan of Greek Yogurt, I like to use a low fat Greek yogurt instead of the sour cream.

- Feta Cheese- 1 cup crumbled.
- Spinach- 1 ½ cups chopped. If using a canned or frozen, please have your spinach drained before adding it to this dip recipe.
- Olive Oil- 1 tablespoon.
- Greek seasoning , such as one of these- (up to) 1 tablespoon.
- Dill- 1 tablespoon.
- Optional- make this more like a dip by adding softened 4 ounces cream cheese.
Here is how to make this Easy Spanakopita Dip.
- As mentioned, please be sure that your spinach has been well-drained before adding it to this recipe. Also, this recipe can be made in a food processor or Vitamix.
- In your food processor of Vitamix, place your Greek Yogurt, minced garlic, and feta cheese. Give these ingredients a few pulses so that they are lightly mixed. Then add the spinach, olive oil, Greek seasoning and dill. Pulse these ingredients until you get a smooth consistency, scraping the sides of the container as needed.
- Add the optional softened cream cheese, and additional seasonings as desired to offset it, and pulse until you reach your desired consistency.
- Refrigerate your dip for at least an hour before serving.
