Ingredients Needed to make a Vegan Caesar Salad
- Bread for homemade croutons- 4 cups cut into cubes. The more stale the better!
- Olive Oil- 2 tablespoons divided or as needed.
- Dressing- recipe and instructions are mentioned above.
- Romain Lettuce- 1 head. Your lettuce should be rinsed and torn into bite sized pieces.
- Tofu- 1 container of firm tofu (12-13 ounce size).

How to make a Vegan Caesar salad
- Start by making the croutons. You can skip this step if you are using your own croutons. To prepare the croutons, preheat your oven to 400 and prep a rimmed baking sheet for nonstick. Toss the bread cubes in one tablespoon of the olive oil and spread them evenly on the baking sheet. Bake for 10-12 minutes or until browned, flipping as needed for even baking. Allow the croutons to cool.
- Meanwhile, prepare the dressing as indicated above.
- To prepare the tofu, cut the tofu into bite sized cubes. In a skillet on low to medium heat, preheat the olive oil. When the oil has heated, you can add the tofu cubes and cook until golden, stirring as needed. Feel free to season as well (minced garlic sounds good!). You tofu should be golden in about 10-12 minutes. Allow the tofu to cool.
- To assemble the salad, place the lettuce in a large serving bowl. Then toss with the dressing. Then add the remaining ingredients, give a quick toss, and serve.
