    Let me first state that muffins are only as healthy as the ingredients that are put into them.
    So please make sure that you are using ingredients that are most healthy for you and your needs.

    I like that this recipe is made with whole wheat flour.
    As followers of the Mediterranean diet know, whole wheat flour is preferred to regular all purpose flour in recipes.

    You may be wondering what bananas do in baking.

    Bananas do a whole lot more than just add taste to a recipe. Certainly bananas fiber, potassium and other nutrients.

    However, in this recipe we will use bananas for moisture and flavor.

    I should also mention that while this recipe calls for two eggs as a binder. You could add an extra half cup of mashed bananas and omit the eggs or half of each ingredient if desired..

    Tips for making these moist banana muffins.

    This recipe calls for a Mediterranean diet friendly oil such as canola oil.
    Butter is usually used in a muffin recipe such as this one.

    Here are some more great tips for you.

    1. Always use fresh ingredients for the best results. This is especially true of leavening agents such as baking powder.
    2. The goal of any muffin is to have something light to bite into and enjoyable to chew. Resist the urge to overmix your batter. Overmixing will cause that gluten to make your muffins more dense and tougher to eat and thus, less enjoyable to bite into and chew.
    3. Resist the urge to fill the muffin cups more than ž full. Doing so can cause your muffins to bake over the edges of the cups and onto the pan, a pain to clean up.

      How to personalize these whole wheat banana muffins.

      This recipe calls for granola which can add flavor and texture.
      Feel free to use a granola that has no added sugar or a granola with nuts to personalize your muffins.

      Mediterranean Diet Banana Muffins

      A few notes about these whole wheat banana muffins with brown sugar.

      You can omit the brown sugar and try substituting between ½ and one tablespoon of molasses for this (you may need to adjust the flour as needed). Another option is to us a brown sugar alternative that can be baked with (please read the label on the packaging for use).

      I mentioned that while this recipe calls for an egg, you could also add an extra half cup of mashed bananas and omit that egg.

      You could also try substituting in a quarter cup of unsweetened applesauce or you egg alternative of choice.

      Ingredients needed to make Mediterranean Diet Banana Muffins

      • Bananas- 2 average size, mashed. Use a very ripe banana for best results.
      • Whole Wheat Flour- 2 cups.
      • Granola- 1 Âź cup
      • Baking Powder- 1 teaspoon.
      • Ground Cinnamon- 1 teaspoon.
      • Brown Sugar- ½ cup (see above for alternatives).
      • Canola oil- ½ cup. Can sub in a similar oil or softened butter.
      • Eggs- 2
      • Almond Milk- ⅓ cup.

      How to make these Mediterranean Diet Banana Muffins.

      • Mash the bananas if not already mashed.
      • Preheat your oven to 350 and prep your muffin pan for nonstick.
      • In a medium mixing bowl, use a fork or a whisk to mix together the flour, granola, baking powder and cinnamon.
      • Next, in a mixing bowl, beat together the brown sugar and oil. Then add the bananas and beat until just mixed.
      • Add the dry ingredients from the first bowl to the mixing bowl along with the eggs and milk and mix until just blended. Do not overmix.
      • Fill the muffin cup three quarters of the way full and bake for 20-22 minutes or until a toothpick comes out clean.
      • Allow the muffins to cool in the pan for five minutes before transferring to a wire rack to cool.
