You may be wondering what are the best apple for baking.
To make this recipe, I suggest using a good baking apple. Baking apples are able to hold up to the heat making them perfect for a recipe such as this one.
Baking apples tend to be more firm which is essential when making baked apples.
Good choices for baking apples that would work in this recipe include Fuji, Gala, Honey Gold, Jonathan, and Granny Smith (can be cooked or baked). You will need one cup of diced apple which is about Âľ of an average sized apple.
You may also be wondering is whole wheat flour good for baking.
Whole wheat flour is a preferred flour in the Mediterranean diet because it has nutrients that regular all purpose flour does not have. However, because of these nutrients and the gluten in whole wheat flour, it results in a more dense baked product (which can be a good thing in bread right?). As a result, we will be using both whole wheat and all purpose flout in this recipe.
This recipe also calls for sugar.
To make this recipe more friendly to the diet, you can use a substitute for sugar.
Alternatives to the sugar include sugar alternative (read instruction on packaging) , honey (1 cup), or even Agave (1 cup).

So I just mentioned that to make this cake recipe more friendly to the Mediterranean diet we will use both whole wheat flour and all purpose flours. Also, using sugar alternatives (that can be baked with), honey, or agave are also suitable substitutes for sugar.
Here are some more great tips for you.
- While this recipe calls for both diced apples and unsweetened apple sauce you could use apple sauce instead of the diced apples (same amount). To substitute for the apple sauce you can mash up one cup of diced apples to get the texture desired.
- Adding chocolate chips is optional. However, the chocolate chips can be added in the batter itself or placed on top of the cake prior to baking.
- Chopped nuts are also optional in this recipe. The chopped nuts can also be added to the cake batter or placed on top (with chocolate chips?) prior to baking.
How to prepare apples for baking in this cake.
I sometimes like to choose two different kinds of apples in a recipe such as this one just to jazz up the taste a bit. Use an apple peeler to remove the skin is recommended as well.

The apple(s) should also be coded and then chopped or diced fine.
Use an apple corer or similar gadget to remove the core. Depending on the size of the apple(s) you may need more than one to make this cake.
How to know when apple cake is done baking.
I use the toothpick method to check to see if the cake is done baking as it may be more difficult to check for browning. If you are adding the optional chocolate chips please note that the chocolate chips can give a false negative result.

- All Purpose Flour- 1 ½ cups.
- Whole Wheat Flour- ½ cup.
- Unsweetened Cocoa Powder- ÂĽ cup.
- Baking Soda- 1 ½ teaspoons.
- Canola Oil- ½ cup.
- Eggs- 2
- Sugar- 1 ÂĽ cup (see alternatives above).
- Unsweetened Apple Sauce- 1 cup.
- Apples- 1 cup, peeled and diced fine.
- Optional- Chocolate chips- one half to one cup.
- Optional- Chopped nuts such as chopped walnuts.
How to make Chocolate and Apple Cake.
- Preheat your oven to 350. Prep a bundt pan or other cake pan for nonstick. I like to use two methods such as nonstick spray along with dusting (unsweetened cocoa powder can be used).
- In a mixing bowl, use a fork or a whisk to blend together the flours, cocoa powder, and the baking soda.
- Next, in another mixing bowl, mix together the oil with the sugar. Add the eggs one at a time, mixing gently between additions.
- For the next step we will add the dry ingredients from the first bowl to the wet ingredients in the second bowl. Add half of the dry ingredients and one half of the apple sauce. Mix gently and then add the remaining dry ingredients and apple sauce.
- Lastly, fold in the diced apples and any optional ingredients.
- Bake this for 30-35 minutes or until a toothpick comes out clean. Allow the cake to cool on a rack before serving.
