I must say that this is one of the easiest, yet most impressive recipes that I have ever seen.
Even better, there are plenty of healthy reasons to make it as well!

If you have made my Easy Gazpacho Soup then you will probably like this soup recipe as well.

Both soups are easy to make and are served cold.
However, this soup is a creamy soup thanks to the yogurt that is added to it.

This soup recipe is especially for those of use asking what to do with lots of cucumbers.

Being that I like to grow vegetables in my garden, I can totally relate to anyone who has a lot of cucumbers to use up. Because I like cucumbers so much, I am always looking for new ways to use them in recipes.

Yes, there are some benefits to eating cucumbers, according to the experts.

Because of the water that is in cucumbers, they are filling yet, low in calories.
Cucumbers are also a source of of Vitamins K and C as well as being a source of potassium.

After trying this recipe you may be wondering what is the benefit of avocado.

Let me start my mentioning that this recipe also includes an avocado in it.
Since becoming a follower of the Mediterranean diet, I have looked for new ways to incorporate avocados into my kitchen creations.

There are several reasons for adding an avocado to this recipe for soup.

I am adding an avocado to this soup to for both flavor and consistency.
Adding an avocado to this recipe seems like a healthier way to add something that is a fat for consistency yet, not a fat that I would regret adding.

Tips for making cucumber soup.

While I will not say specifically what kind of cucumber works best in this recipe I will say the bigger the better, in my opinion. This is because the bigger cucumbers add volume and tend to be less sour in taste.

Here are some more great tips for you.

  1. Dill is the perfect complement to this recipe. If you cannot find fresh dill, try adding another fresh herb, such as cilantro, to help balance the flavor of the soup.
  2. I get that not everyone loves a thick soup in the summer. To thin this soup out, try adding a cup or cup and a half of vegetable broth to this recipe.
  3. With an easy soup recipe such as this one, I like using my Vitamix blender. An immersion blender may also be an idea with this recipe.

Here is how to prepare your cucumber for this recipe.

I do not suggest using a cucumber with the skin still on it for several reason.
Instead, use a peeler to peel your cucumber.

Here is how to remove the seeds from a cucumber.

The easiest way to remove the seeds is to first cut the cucumber lengthwise from tip to bottom. Open the sliced cucumber up and use a spoon to scoop out the seeds.

Yes, you can freeze this cucumber soup.

I suggest that you freeze it in small quantities however, and allow it to fully thaw before serving.
Freezing this soup in an ice cube tray makes for a convenient way to add the individual cubes to other kitchen creations in the future!

Earlier I mentioned that the easiest way to remove the seeds is to first cut the cucumber lengthwise from tip to bottom. Open the sliced cucumber up and use a spoon to scoop out the seeds.

I also mentioned that this soup can be made in a blender.
With an easy soup recipe such as this one, I like using my Vitamix blender. An immersion blender may also be an idea with this recipe.

The ingredients needed for this Easy and Creamy Cucumber Yogurt Soup

  • Cucumber- 3 cups chopped. First remove the skin and then the seeds before chopping up your cucumbers.
  • Avocado- 1. Peel the avocado and remove the pit. Make sure that your avocado is somewhat soft (ripe is easier to work with).
  • Yogurt- 1 ¼ cups. I like a fat-free plain (unflavored) yogurt. Greek Yogurt may be a bit too thick for this recipe.
  • Green Onion- 1 chopped.
  • Garlic– 1 clove minced.
  • Lemon Juice- 1 tablespoon.
  • Dill– 2 tablespoons plus additional as needed for presentation.
  • Seasonings to taste. This can include Salt and/or Pepper.

How to make this Cucumber Soup

  • Prepare the cucumber as described above- skin and seeds removed and chopped.
  • Also, prepare the avocado by removing the pit and peel.
  • In a blender, blend together the cucumber, avocado and yogurt on high for 15 seconds.
  • Add the onion, garlic, and dill and blend until smooth. You can season to taste as needed.
  • Refrigerate the soup for at least four hours before serving. Serve with additional dill as desired. Some folks like to add a bit of mint as well.
