    Mediterranean Diet Chocolate Chia Pudding

    Mediterranean Diet Chocolate Chia Pudding

A healthy chocolate and chia dish that reminds me of the pudding that I ate as a kid.
However, that pudding was full of sugar and other ingredients that may not have been that good for me.

Did you try my Vegan Chocolate Hummus recipe?

That is a classic hummus recipe that is made with chocolate.
This pudding recipe features chia seeds.

I like that the ingredient list for this recipe is pretty simple.
Everything that goes into this pudding is recognizable and not processed.

Chia seeds are really liked by folks following a plant based diet.

Not only do chia seeds add to the textural value of a recipe, they also add some nutrition.
Chia seeds are a good source of fiber and magnesium and they even have a bit of protein in them.

For anyone asking what is the best way to eat chia seeds, this recipe is a good answer.

I mean, chocolate is always a good option for me to consider. Adding a bit of healthy ingredients to the chocolate flavor is even better as far as I am concerned.

Topping this recipe with a bit of fruit is a great way to serve it.

I like sliced bananas on top of my pudding. However, I think that most berries, such as strawberries, would also be good.

    Tips for making chocolate pudding.

I know that I just mentioned that topping this pudding with fruit makes it even better.
Chopped nuts would also be a good choice for me to top this pudding with.

Here are some more great tips for you.

    1. I have added vanilla extract to this recipe for a bit of flavoring.
However, you could easily use another extract such as almond extract or banana extract instead.
    2. Yes, this recipe is for a chocolate pudding with chia in it. However, why not make this into a great tasting dip? You could dip some kind of a cookie or fruit such as apple slices.
    3. Adding a bit of coffee can make this taste even better. I like a teaspoon or so of an instant coffee for example.

Here is how to make this recipe for Mediterranean diet chocolate chia pudding vegan.

This recipe calls for a cup of milk. However, you could use a nut based milk to make this a vegan chocolate pudding recipe instead.

Make this a low in carbs chocolate pudding.

Yes, chia does have its carbohydrates. However, chia is also a good source of fiber. Two ounces of chia seeds has about 24 grams of carbs and 20 grams of fiber.

This is the perfect breakfast recipe that can be made the night before.

As a matter of fact, this chia pudding is even better when made the night before. Simply cover the pudding and refrigerate it for at least a couple of hours.
