    This recipe is for anyone asking how do you make potato salad from scratch.

    Technically, the typical potato salad usually has a few main ingredients along with some seasonings.
    Those ingredients include cooked potatoes, mayonnaise, and hard boiled eggs.

    This potato salad recipe has been modified to be friendly to the Mediterranean diet.

    Yes, we will use actual potatoes as this would not be potato salad without that main ingredients.
    However, we are going to use friendlier ingredients that are lower in fat and have little processing.

    I suggest using a smaller potato rather than a larger, starchy, and more meaty potato (like russet) that is best for baking with.
    Look for a 'waxy' potato as they hold their shape well when both boiled and added to a recipe such as this one. Waxy potatoes include new potatoes and red potatoes.

    1. Make this potato salad more like an old fashion potato salad. Simply add a tablespoon or so of regular yellow mustard.
    2. This recipe calls for pickles which give the salad that tart balance with a bit of seasoning. Feel free to sub in a quarter cup of relish if you prefer that sweet balance to that tart balance (or if that is what you have on hand).
    3. This recipe does not include any kind of preservative. However, this potato salad should be able to keep the refrigerator for up to five days when stored correctly.

    The ingredients that are needed to make Mediterranean Diet Potato Salad

    • Potatoes- 3 pounds. There are about eight small red potatoes to a pound. Prepare your potatoes by either first removing the skin or cleaning the dirt off. Then boil the potatoes as described above.
    • Mediterranean Diet Friendly Mayonnaise- 1 cup (feel free to add more if you like a more moist potato salad). You can find vegetarian mayonnaise here.
    • Onion- ½ cup chopped. Red or a sweet Vidalia onion work well.
    • Chopped Pickles- ½ cup. If you use a relish, please check the ingredients to make sure that they are friendly to the Mediterranean diet.
    • Mustard- 2 tablespoons. Use a yellow mustard for a more 'old fashion' salad or a Dijon for less 'tart' salad.
    • Optional- chopped celery, chopped hard boiled egg, chopped cilantro or parsley.
    • Seasonings as desired. This can include Italian Seasonings, Salt, and/or Pepper. Another option is Mediterranean Diet Seasoning Blend

    How to make Homemade Mediterranean Diet Potato Salad.

    • Prepare you potatoes as described. To prepare the potatoes you will need to boil them for about 15 minutes or until they begin to get tender (with firmness). Allow the potatoes to cool and them chop them into 1 ½ to 2" chunks.
    • In a large mixing bowl, mix together the chopped potatoes with the mayonnaise. Then stir in the onion, pickles, and mustard.
    • Add any optional ingredients and season as desired.
    • Refrigerate for up to five days. Tip: use a large mixing bowl that comes with a lid to make this in. Then you can store easily store the potato salad in the same bowl that you made it in!
