    This is the easiest and tastiest Mediterranean Diet Shrimp in Garlic Sauce recipe. Gluten free and low carbohydrate diet friendly.

    An easy Mediterranean Diet Shrimp in Garlic Sauce recipe is always a good thing in my opinion.

    What makes this recipe even better for the diet is that is not made with butter.

    Mediterranean Diet Shrimp in Garlic Sauce

    This is an easy shrimp recipe that can easily be served by itself.
    However, you could also serve this shrimp with pasta or vegetables as well.

    This recipe reminds me of my Garlic Shrimp Linguine made with wine recipe.

    That delicious recipe was made with linguine as well as having wine as an ingredient in it.
    I would consider this recipe to be a bit more basic yet, it is also more flexible as what you can serve it with.

    I must say that olive oil actually adds to the taste of this recipe.

    The nutty-like taste that comes naturally from olive anything sits nicely with the garlic. You probably will not miss the heavy fatty taste of butter in this recipe as a result.

    You probably already know that the Mediterranean diet avoids the use of butter.

    This is because the fat in the butter is not considered by the experts to be the healthiest for the heart.
    As a result, we use olive oil in place of butter.

    Here is how to clean your shrimp.

    If your shrimp is frozen then rinse it under cool water to thaw it out.
    Start by removing the legs (they are sticking out from the inside) by simply pulling them off.
    If the head is intact then you can pull that off as well.

    I use cool water that is slowly running for the next steps so that I can rinse the shrimp as I go.

    Pull the shell off (you can keep the tail on for easier eating). Then use a pairing knife (be careful of course) to make a slit down the back of the shrimp to pull out the vein (aka the digestive track aka devein ). Discard the removed parts and be sure to keep your work area sanitary.

    1. You will know when your shrimp is done when it turns from that gray color of raw shrimp to the pink-white color. It usually only takes a few minutes to cook shrimp.
    2. You can avoid getting that 'rubber-like' shrimp by not over-cooking it. Keep an eye on your shrimp while it is cooking to make sure that they do not over cook.
    3. I like a large or medium sized shrimp in this recipe as opposed to a small or even salad sized shrimp as the meaty taste of the shrimp adds to the overall taste of this dish.

    This recipe works best when made in skillet.

    Depending on the size of the shrimp that your are using, you can use a medium skillet or large skillet to make this recipe.

    As mentioned, depending on the size of the shrimp that your are using, you can use a medium skillet or large skillet to make this recipe.

    • Olive Oil-3 tablespoons.
    • Garlic- 5 cloves minced. That is about 5 teaspoons of minced garlic.
    • Shrimp- 1 pound cleaned, peeled, deveigned.
    • Lemon Juice- 1 tablespoon.
    • Seasonings as desired- This can include Italian Seasonings, Salt, and/or Pepper.
    • Vegetable Broth- ¼ cup divided or additional as needed.
    • Optional- toppings such as chopped green onion and or red pepper flakes.

    How to make this recipe for Mediterranean Diet Shrimp in Garlic Sauce.

    • Heat the oil with the garlic in a skillet on medium heat, stirring as needed for one minute. Then add the shrimp, lemon juice and seasonings. Cook this for about a minute and then stir in ¼ cup of the vegetable broth.
    • Turn the heat down to low and cook until the shrimp has turned pink, stirring and tossing as needed. This should be about four to five minutes total. Add additional broth as desired or needed.
    • Top with Serve alone or with pasta.
