    • Milk. Buttermilk can alternatively be used.
    • Vanilla Extract

    • Leaveners Baking Powder and Baking Soda

    • Notes: You will need a blender, mixing bowl, rubber spatula or similar item, a scoop such as an ice cream scoop, and griddle.


    1. Blend In a blender or food processor, blend together the cottage cheese, eggs, milk, and vanilla extract.
    2. Dry Ingredients. In a large mixing bowl, use a whisk to combine together the flour, baking powder, and baking soda.
    3. Combine. Pour the wet ingredients from the first step into the large mixing bowl with the dry ingredients and use a rubber spatula or similar item to gently fold the wet ingredients in without over-mixing the ingredients.
    4. Rest. Allow the batter to sit or rest for five to 10 minutes for the leaveners to do their job. Meanwhile, you can prep your griddle and preheat the griddle on medium high heat.
    5. Cook Use a scoop to scoop out the batter onto your preheated griddle, leaving room between each of the pancakes for spread. Cook the pancakes until they begin to bubble and turn golden brown (one to two minutes). Then flip the pancakes and cook until done.
    6. Serve You can serve your pancakes with syrup, butter, whipped cream or as desired.

    Full fat cottage cheese is used in this recipe for optimal moisture. While 2% could work in this recipe, lower fat versions can make these pancakes dry and less tender.
