What makes Cottage Cheese Pancakes so good?
Using cottage cheese, instead of milk or other kinds of dairy, gives these pancakes added moisture, a tender and fluffy texture, and a boost of protein.
I like that these fluffy, high-protein cottage cheese pancakes are moist, satisfying, and have zero cottage cheese taste, making them perfect for a guilt-free breakfast.

Tips for making the best easy cottage cheese pancake recipe
Full fat cottage cheese is used in this recipe for optimal moisture. While 2% could work in this recipe, lower fat versions can make these pancakes dry and less tender.
More helpful tips for you.
- A blender is used to combine together the wet ingredients in the first step. This is done to break down the curds for an extra smooth and fluffy texture.
- When you combine the wet ingredients with the dry ingredients in the third step, use a rubber spatula to gently fold in the wet ingredients. Overmixing the ingredients can result in dense pancakes rather than fluffy pancakes.
- Smaller pancakes work best in this recipe as the pancakes are softer than 'normal' pancakes. Use a scoop (no larger than ¼ cup) to scoop out the batter to keep the pancakes a similar size as this will allow them to cook more uniformly. Luckily, these pancakes tend to spread less than other pancakes.

How to store leftover pancakes.
Once your pancakes have fully cooled, they can be stored in an airtight container. When properly stored, pancakes should keep for up to four days or up to a few months when frozen. If you intend to freeze these pancakes, use a sheet of parchment paper between the layers.
