    That is because this soup is made in the blender.

    This is the perfect soup to share with a side order of my Toasted Garlic Flatbread Chips.
    I am raising my hand as the person dipping their chips into this amazing soup too.

    Pumpkin soup is really a staple food during the fall season.
    Around here, pumpkins start showing up before the leaves begin to fall.
    As a result, it really is the pumpkin that is the first sign of fall.

    You may be wondering what are the benefits of eating pumpkin?

    This orange member of the squash family is actually quit nutritious to eat.
    Pumpkins really do have some nutrients in them making them a healthy choice. health.

    I should also mention that pumpkins are rather low in calories having about 30 calories in a cup.
    Pumpkins are also loaded in Vitamin A, which is needed for vision and our immune system.
    Also worth noting is that pumpkins are a healthy and filling food in addition to tasting good in recipes such as this one.

    You may also be surprised to learn that you can indeed make a soup in a blender.

    As long as your blender has the power to heat up enough to cook the soup, you can get away without having to heat it on the stove after blending. These days there are many blenders that are capable of both blending and cooking soup.

    My choice for a blender that can both blend and cook soup is a Vitamix Blender.
    I have been using mine for years and have had no issues in doing so. There really is a lot that you can do with a blender such as a Vitamix Blender.

    I have some great tips to help you make a great soup in a mixer.

    1. Use canned pumpkin rather than a roasting a fresh pumpkin to make this recipe even easier.
    2. Make this recipe vegan by using vegan broth rather than a chicken broth.
    3. Also, use coconut milk rather than Greek Yogurt to keep your pumpkin soup vegan as well.

    This pumpkin soup recipe does not have to be made in a blender.

    If you blender does not have the power to heat soup for cooking, you could easily make this soup on the stove. Please check the manufacturers instructions that came with your blender to assure that you can make this soup in it.

    To make this soup on the stove, using an Immersion Blender can be helpful.

    I like the way that an immersion blender will allow you to puree food cooking on the stove quickly. Soup recipes, such as this one, is an example of such as soup.

    There are some great wine ideas to pair with this recipe for pumpkin soup.

    I like a red wine because of the balance it gives to the pumpkin taste. Pinot noir is a good choice (you can even get creative by adding a bit to your soup!).

    I mentioned above that we will use canned pumpkin rather than a roasting a fresh pumpkin to make this recipe even easier.
    Also, you can make this recipe vegan by using vegan broth rather than a chicken broth as well as coconut milk rather than Greek Yogurt.

    Blender Pumpkin Soup

    • Chicken Broth- 1 cup. Can sub in using vegan broth .
    • Greek Yogurt- ¼th cup. Can sub in heavy cream or coconut milk .
    • Canned Pumpkin- 1 (15) ounce can.
    • Ground Ginger- ½ teaspoon.
    • Nutmeg- ½ teaspoon.
    • Garlic- 1 clove (about a teaspoon) minced.
    • Onion- ¼ cup chopped or sauted.
    • Honey -1 tablespoon. Can sub in brown sugar or similar product.
    • Salt and pepper to taste.

    Blender Pumpkin Soup

    It is best to check the guide from your manufacturer for specific details on how to make a soup in your blender. However, this is how I make mine in my Vitamix Blender.

    • Start by adding the ingredients (except for the salt or pepper) to the blender. Add them in the order that they are listed as the liquid ingredients need to be added first.
    • On a Vitamix (this is how Vitamix recommends settings for making their soups) set the variable to 1. This is the lowest variable. Turn the Vitamix on and then increase the variable slowly to 10 and then high.
    • Blend the soup for 6-7 minutes or until there is a steam that comes from the lid.
    • Season as needed.
