    No matter how you make this salad for two, it is easy and really yummy!

    This salad recipe is a lot like my Chicken Burrito Bowl for Two.
    However, the main difference between the two recipes is that one of them involves adding chicken to it. That would be the burrito bowl recipe.

    This delicious salad incorporates avocado in it.

    I love the flavor that avocado brings to a salad. That great taste works well in offsetting the competition that the beans and the corn seem to take with one another.

    You may be asking about what are the benefits of avocado.
    I was surprised that avocados have more potassium than bananas have, and bananas are rather famous for their potassium. However, avocados are also a good source of fiber and heart healthy fat.

    There are several different kinds of beans that go well in this salad bowl recipe.

    Black beans are the standard bean to add in a recipe such as this one. However, you could alternatively use kidney beans or pinto beans.

    You will need to prepare your beans before you can add them to this salad bowl.
    Before you add the beans to your salad bowl you will need to drain them. Once the beans have been drained and then rinsed.

    Here are some tips for making your salad bowl.

    1. If you are going to make this salad bowl for two, hold on to adding the avocado for when you are ready to serve it. You probably do not want to serve this with avocado slices that have started to turn brown.
    2. This salad tastes great tossed in olive oil.
    3. Pair this nacho salad bowl for two with a Sauvignon Blanc or Pinot Grigio.

    This salad can also be topped with tortilla strips.

    You can use regular tortillas to make your strips. There are also tortilla strips that are available for purchase.

    There are other options that you can use instead of the tortilla strips.
    I have a recipe for an easy Homemade Pita Bread that would go great with this recipe. However, you can simply use tortilla chips instead.

    Making a salad bowl for two offers you more than one way to serve it.

    You could use the salad bowl as it is for serving out of. Or, as a couple, you could simply hand your partner a fork and share the bowl together. 🙂

    You can use regular tortillas to make your strips. There are also tortilla strips that are available for purchase.

    Easy Nacho Salad Bowl for Two

    To assemble this salad you will need a large serving bowl like one of these. You will most likely have leftovers as well. For any leftover avocado, you an use an avocado saver to keep it fresh.

    Since the canned ingredients are available in a standard sized can, this recipe may yield more beans and corn than you may desire in your salad for two.
    Feel free to adjust the quantities as desired.

    • Beans- 1 can (15 ounce). Have you beans drained and then rinsed. Black beans are the standard bean to add in a recipe such as this one. However, you could alternatively use kidney beans or pinto beans.
    • Corn- 1 can, 15 ounces. Please drain the corn as well.
    • Sliced Pepper- ⅛th-¼th of a cup.
    • Onion- ½ small chopped.
    • Avocado- 1 sliced
    • Cilantro- ¼th cup.
    • Tortilla Strips - ¼ cup.

    For the dressing

    • Extra Virgin Olive Oil- ¼ cup
    • Lime Juice- 2 tablespoons.
    • Mexican Seasoning- 1 teaspoon.

    Easy Nacho Salad Bowl for Two

    • In a cup or small bowl combine together the ingredients for the dressing. Set this aside.
    • In your large serving bowl, combine together the beans, corn, pepper and chopped onion.
    • Whisk together the dressing ingredients that you placed together in the first step. Then pour it over the ingredients in the large bowl. Toss these ingredients together.
    • Arrange the remaining ingredients over salad bowl and serve.
